C reated in 1981 by Jean-Claude Guilloteau, the Fromagerie has developed due in part to their unique production process. Ultrafiltration removes the excess water contained in milk, concentrating the protein. After the milk is pasteurized, it is filtered, leaving just the protein, nutrients and flavor. Rennet, ferments, salt and other ingredients are then added. Ultrafiltration creates a creamy texture, fine rind and unique taste. The process allows for a consistent production quality year round and an exceptional nutritional profile.
