MEAT TYPE (RFP) The meat type as described on the EX 28 RFP shall be identified on the return by the insertion in the Meat Type column of the corresponding Category cipher which correctly matches the description of the meat. HANDBOOK OF AUSTRALIAN MEAT (H.A.M) Item Number (RFP) The item number for the carcase, primal cut or bulk manufacturing pack specified in the Handbook of Australian Meat or the AUS-MEAT Register of Cuts & Items or the AUS-MEAT Limited RFP Cut Code Reference Meat Item Specification list, plus the appropriate suffix code where the primal cut is further processed. For individual specifications, which vary slightly from the normal specification, the H.A.M number and suffix code shown in this booklet shall be shown most accurately describes the primal cut from which the cut is derived. Licensees in doubt as to the appropriate Handbook number should contact AUS-MEAT. SUFFIX CODE In order to identify items which have been prepared further than the primal cut or bulk manufacturing pack stage for which no cut code number is shown in this booklet, the following suffix codes are to be shown after the Handbook number of the item from which the prepared meat is derived (specific EU Quota codes also shown): G H P V W X Y EU GRAIN FED HIGH QUALITY BEEF (GF-HQB) When Beef for the EU has been certified as Grain Fed High Quality Beef (Quota EC 481 / 2012) and the Health Certificate and RFP have been endorsed accordingly, the suffix G must follow the AUS-MEAT item number on the RFP return. Beef Cube Roll: 2240G EU - HIGH QUALITY BEEF When Beef for the EU has been certified as High Quality Beef (Quota EC 593/2013) and the Health Certificate and RFP have been endorsed accordingly, the suffix H must follow the AUS-MEAT item number on the RFP return. Beef Cube Roll: 2240H PORTION CONTROL PACKS When a specific primal cut or manufacturing meat is prepared as an accurate weight and uniform quality portioned item, the letter P is generally to be used after the number for the cut / item from which the portions are derived.. In certain cases, other suffixes are to be used (Z). Veal Tenderloin Steaks: 3330P Lamb Leg Steak: 4820P VALUE ADDED MEAT Means a process such as marinading, flavouring, salting or inclusion of additives / ingredients by means such as massaging, tumbling or injection in order to enhance taste, tenderness or other sensory attributes such as colour or juiciness. The process generally does not change the form, appearance or texture of the product Beef Flap Meat Seasoned: 2206V Pork Spare Rib Marinated: 4160V SPECIAL TRIM OR PREPARATION When a specific primal cut is specially trimmed or prepared and no trim option number is allocated, the letter W is to follow the HAM item number which most clearly describes the cut. This category can include red meat (denuded primal cuts), roasts, primal cuts divided in larger portions, or any other preparation not otherwise specified in other sections.
