Celebrating the Best of Cuisine and Wine in Charlottesville In Central Virginia we are extremely fortunate to be able to source almost all of our ingredients from small local farmers. Chef Brian and Chef Jose are passionate about supporting such farms as they bring the best flavors to the table. In doing so we help to keep these farms, with exceptional produce and protein, thriving. Wayside Produce hand delivers exceptional root vegetables and tomatoes. Polyface Farms provide us with some of the most pampered poultry in the country. The husband and wife team at Meadow s Pride Farm bring us the most delectable whole lambs. When choosing the wines to go onto our list I have a similar frame of mind. Supporting small, family vingerons can also make for the best juice in the glass. All of these amazing producers have a love and dedication to their craft. The attention to detail and care for the land that these farmers and winemakers exhibit is truly heartwarming. It is a passion of mine to educate our guests on wines that they may have never heard of. Our list spans the globe, however we offer some of France s best and pay special attention to the talented producers in Virginia. Featured Producer: Hervé Souhaut Hervé Souhaut created Domaine Romaneaux-Destezet in 1993. Hervé works 5-hectares of old and ancient vines between 50 to 100 years old. He is very fortunate to own two vineyards in the Rhône Valley just opposite the storied hills of Hermitage in Saint Joseph. This region is widely recognized as being one of the finest areas for wine production on the planet; thanks in part to its elevation, ancient vineyard sites and the southeastern and southern exposures. Hervé works entirely on whole grape bunches and semi-carbonic maceration. All of the vineyards are farmed organically, and no chemicals are added in the winemaking process. His philosophy is to extract a delicate balance of tannins from the grapes, to make a wine with subtlety and finesse. Wines of Virginia Here are a few of our favorites from Virginia s blossoming wine industry. Castle Hill Cider - Celestial Merret $45 A producer of truly world-class cider. The style of Castle Hill rivals the best of Normandy. We are fans of these dry and complex offerings. Celetial Merret goes through a double fermentation process in the bottle. This is the same method used in Champagne. There is no fining or filtering as you will see when you look at the bottle. Dom Perignon and Madame Cliquot often get the credit, long before they figured out bubble capture, Christopher Merret figured it out in the 17 th century. This cider is an homage to him. Ankida Ridge - Pinot Noir 2013 $89 Ankida Ridge is leading the charge of producing the best Pinot Noir in Virginia. The estate features only a few acres of vines and plenty of happy animals. Dennis and Christine Vrooman are some of the nicest winery owners you will ever come across. Stop in to taste their Burgundian-style pinot noir and chardonnay or to pet their sheep. Lovingston - Josie s Knoll Pinotage 2015 $47 This is one of the greatest values in Virginia. This playful offering reminds us of a wild, red fruit driven Pinot Noir. This Pinotage is grown on red clay slopes. This tasty bottling comes to us byway of the Puckett family & is crafted by the insightful winegrower, Riaan Rossouw. In the 1900s, a woman named Josie owned the knoll where the grape vines are planted, hence the wine s namesake King Family - Petit Verdot 2014 $89 In 1996, the King family put down roots in Crozet and has been helping to define Virginia wine ever since.
