Since the 15th century, rice has been cultivated in this province, which is still the single largest rice growing area in Europe today. The combination of exceptional climate, type of soil, landscape and local expertise, ensures the uniqueness of these Italian rice. Fontana FORMIELLO arborio rice rounded grains absorb stock without becoming too soft, making it ideal to cook smooth and creamy risottos. Fontana FORMIELLO carnaroli long grains retain well its texture during cooking, making it ideal for fine risottos and rice salads. Fontana FORMIELLO venere is a black prized wholegrain rice with a small and fragrant grain, ideal for rice salads and soups but reaches its pinnacle with seafood. COUSCOUS Fontana FORMIELLO Cous Cous is produced in Italy and consist many tiny granules made from steamed and dried durum wheat. Cous Cous is a daily dish in the province of Trapani in Sicily where it was introduced from North Africa where it originated and is a staple ingredient. Fontana FORMIELLO Couscous is of medium size and can be served plain, in stews or casseroles or with the addition of flavourings such as garlic, chilli, coriander, lemon or lime juice. Roasted Mediterranean vegetables can be stirred through the couscous once cooked - as well as giving a delicious flavour this adds colour to the couscous. POLENTA SVELTA Fontana FORMIELLO Polenta Svelta is made from coarsely ground cornmeal and is precooked with steam to make it fast cooking while ensuring that all the nutritional and organoleptic properties of corn flour remain unchanged. Polenta is a very traditional northern Italian dish where it has been a staple since the beginning of the 16th century when the cultivation of corn was introduced to Europe from the Americas. Fontana FORMIELLO Polenta Svelta is derived from the selection of different varieties of corn from Northern Italy in order to obtain a special blend of extraordinary quality. Fontana FORMIELLO Polenta Svelta is ideal for the most traditional recipes and goes in a surprising way to the meat (braised beef, sausage, stews), mushroom and red sauces. CAMPOFILONE EGG PASTA Fontana FORMIELLO egg pasta is made in Campofilone, in the Marche region in central Italy according to traditional and artisanal procedures passed over through generations. This premium egg pasta is produced with finest durum wheat and eggs from free-range hens in the same traditional process to make egg pasta as it was made in the past by the old ladies of the Campofilone village. The dough is mixed at low temperature and successively, after the extrusion and the cutting steps, it is placed on food grade paper sheets folded up in four sides, respecting the ancient tradition of Campofilone. The pasta is then dried, before packing, at low temperature (under 36 C), for 20-48 hours. Fontana FORMIELLO pasta is ideal with meat, vegetable and fish sauces. WINE VINEGAR Fontana FORMIELLO Red and White Wine Vinegars are made in Naples, in the South of Italy, through the fermentation and barrelageing of selected Italian grapes. Wine vinegar has a very old history in Italy where it has been used since Roman times for culinary purposes and for its therapeutic properties Fontana FORMIELLO red wine vinegar with a warm colour and a full-bodied flavour, is ideal for salad dressings, sauces and marinades. BALSAMIC VINEGAR OF MODENA Fontana FORMIELLO Balsamic Vinegar of Modena PGI is made in Modena, in Italy, using traditional procedures and is a protected geographical indication product. Balsamic Vinegar of Modena PGI is a bittersweet condiment obtained from cooked grape must or concentrate and wine vinegar, capable of enhancing the taste of any dish. Slow acetification of the raw materials is followed by maturation in wood barrels up to three years for the aged product. The result of this process is a condiment with a bitter-sweet taste, deep brown colour and a persistent, delicate, slightly acetic aroma with woody overtones. The PGI seal of authenticity certifies this product has been produced exclusively in Modena according to the strict traditions perfected in the province of Modena over many centuries.
