De Chastenay is dedicated exclusivley to Crèmants de Bourgogne. It is elaborated by Cave des Hautes Côtes. Production of this wine is limited. The brand is also dedicated to On-Premise. Crèmant de Bourgogne Type of Wine: Crèmant Variety: Burgundy Bringing together the traditional Burgundy grape varieties, to offer a wine that expresses the multiple virtues of France. The thoroughbred strength of Pinot Noir is met - as if echoed - by the purity and elegance of Chardonnay and Aligoté. Food Pairing: Serve at around 8 C as an aperitif with gougère, or with a meal alongside escargot, fish in sauce or farm-bred poultry. This wine will bring out the best in refined cuisine. PAGE 3
Nuiton-Beaunoy was founded in 1957. It is 456 Ha and has 93 growers. It is established in Côte de Beaune and Côte de Nuits and produces 40 different wines totaling 187,000 cases annually. The varietals grown are Chardonnay, Aligoté and Pinot Noir. The flagship wine is Gevrey-Chambertin 1er cru Clos de Chapitre - Monopole. Bourgogne Pinot Noir Type of Wine: Red Variety: Pinot Noir Purple color with deeper glints. A bouquet of small red fruits (cherry, red currant). Lively and robust in the mouth, it is also elegant and appealing. Serve at 14 to 16 C. Bourgogne Chardonnay Light golden color with silver glints. Prominent white flower fragrances in the bouquet. Unctuous and persistent on the palate with flavors of white fleshed fruit (pear) and stone fruits (apricot, fuzzy peach). Serve at 10 to 12 C. PAGE 4
Mâcon-Villages A clear and bright wine with Terres Secrètes was founded in 1928. It is 912 Ha and has 306 growers in sustainable development. There are 3 wineries: Prissé, Sologny and Verzé. Annual producution is 450,000 cases. The wineries have 4 varietals: Chardonnay, Pinot Noir, Gamay and Aligoté, and are also specialists of Mâcon-Villages, Saint-Véran and Pouilly Fuissé. and yellow fruit, smooth and full in the mouth. Typical of its appellation, this white Mâcon-Villages is nicely balanced and harmonious. Mâcon-Villages are fresh wines which are equally expressive both before and with a meal. Bourgogne Pinot Noir Type of Wine: Red Bourgogne Chardonnay Variety: Pinot Noir Displays a bright ruby color with purple highlights. Open and expressive on the nose, the wine develops aromas of black cherry, blackberries and strawberry jam. Smooth, supple and refreshing, with black currant aromas on the palate. Serve at 14 C. Clear yellow to pale gold. acacia. Bold aromatics, lively and clean. This wine can be enjoyed now. Avoid over chilling this wine because it will spoil it. Cool it naturally to serve at 11-13 C. Mâcon Milly Lamartine Type of Wine: Red Variety: Gamay This luminous ruby wine reveals aromas of red fruit subtly blended with soft spicy smells. The coaxing bouquet evokes juicy cherries, blackcurrants and blackberries. It s full bodied, dense structure is very satisfying in the mouth. Best served at 14C0/570F Mâcon Prissé Mâcon Verzé Croix Jarrier Beautiful pale gold. The nose is marked by ripe, almost exotic fruit. On the palate the honey notes mingle with the delicate aromas of linden and white fruit to conclude in ample and generous mouth. Best served at 11C. PAGE 6 A brilliant golden hue with silvery highlights. An astonishing clean nose with a definite mineral tone, highlighting a personality that derives from a cooler terroir on the slopes of the Mâconnais. The mineral touch gradully gives way to delicate aromas of fleshy white fruits and violets. Best served at 11C0/510F. Keeping potential of 3 to 5 years, if stored properly.
Pouilly-Fuissé It takes three to ten years for all of the wealth of this dry wine to come through in fine aromas of white flowers and citrus fruit evolving into notes of hazelnut, almond, vanilla and gunflint as it ages. Serving Advice: Pouilly-Fuissé is primarily a wine whose delicacy and elegance enhance food, especially crustaceans and fish dishes. Saint Véran The color is a deep delicate gold. The nose blends aromas of fruit (peach and pear) and white flowers (acacia and honeysuckle). The full fleshy mouth is balanced by an elegant freshness. Serving Advice: Avoid over chilling this wine because it would spoil it; cool it naturally to serve at 11-13 C. Saint Véran Les Cras Saint Véran Les Sentinelles A golden color with light golden highlights. In the bouquet you will find fresh almonds complementing citrus and notes of white flowers. The taste graduates in the mouth; powerful yet airy. There is a touch of iodine which gives a very pure mineral style. Serve at 11-13 C. The color is a deep delicate gold.
