CASE STUDIES PADDOCK TO PLATE - BUNDABERG, QLD Cattleman Rob Cook of Queensland contacted Viking Food Solutions in November 2015 after acquiring an existing Butchers Shop in Bundaberg. Rob s vision was to be able to supply the end user, from paddock to plate, his own quality cattle from his property in Bucca QLD and develop the brand of Tender Sprouted Meats. Their unique farming technique of finishing Brangus cattle on barley sprouts had opened an opportunity to capitalise on their amazing product, as Rob says, We were trying to get fat cattle all year round and what we basically found was once we started sending cattle off to be MSA-graded [Meat Standards Australia eating quality], we were breeding pretty phenomenal cattle. And the way we were fattening and finishing them we had a product where we weren t really tapping in to the full value of it. After an initial phone discussion with Rob Cook, Stuart Mead flew to Bundaberg to discuss the plans for Tender Sprouted Meats and offer machinery and packaging solutions. Viking supplied various machines including a Maturmeat 150kg Dry Ageing Cabinet, Automatic Hamburger Machine, and a Batter Breading Machine. Completing the brand was Viking s Custom Printed Shrink Bags, proudly bearing the Tender Sprouted Logo and providing outstanding product presentation. After just a couple months of operation, Tender Sprouted is already becoming a favourite among the locals and those in the know. As business partner Shane Simpson says the feedback from the local people here has been phenomenal. Cattleman & Owner Rob Cook and his wife Sarah, and business partner Shane Simpson THE REVOLUTIONARY UNIT FOR DRY AGEING MEAT Maturmeat is a new revolutionary system designed for reproducing the ideal climate conditions for ageing meat, obtaining tender and tasty dry aged meat. CASE STUDIES MEATSMITH HERITAGE BUTCHER - FITZROY, VIC Former Peter Bouchier butcher, Troy Wheeler and chefrestaurateur Andrew McConnell recently opened a new butchers store on Smith Street, Fitzroy. Cleverly created, the store holds a distinct contemporary vibe with its offering of gourmet rare-breed beasts such as pheasant, pre-marinated and corned meats, smallgoods salamis, potted foie gras and kidneys and ready-to-eat dishes such as the Cumulus slow-cooked lamb shoulder. Viking Food Solutions became a part of this operation during mid-2015, to supply a custom machinery solutions to meet the needs of the new operation; being a part wholesaler (suppling various restaurants across Melbourne), part retail shop and part commercial kitchen. The machines chosen included a bowl cutter, mixer mincer, bandsaw, dip tank, sausage fillers and vacuum packers which were all successfully installed by Viking. Meatsmith is fully operational and open to the public as a true epicurean experience. CANNINGS FREE RANGE BUTCHERS - MALVERN, VIC Sam Canning s successful retail operation already in Kew and Hawthorn have enabled the enthusiastic entrepreneur to open a third store in Malvern, Vic. The Malvern store is a smaller than Kew & Hawthorn, but the space completely utilised with an extensive cabinet and selfserve shelves, it s a bright and inviting environment made unique with its quirky round window. Again Viking was there to assist supplying machinery solutions to compliment the new store, and ensure Sam s new venture meets its full potential. For me, good quality, time saving machinery is the only way forward. Systemising my business with consistency, reliability and quality is my goal.
