Mix together. 0,600 kg Ice cream 0,150 kg Chocolate decoration Tarte au Chocolat 2,000 kg Tarte au Chocolat 0,800 kg Eggs 0,800 kg Oil or butter Yield: 30 Cups Mix all ingredients for 2 3 min. at low speed. Fill the Tarte au Chocolat batter into the cups and bake at approx. 200 C* for approx. 20 min. Serve the Lava Cake warm. Crème Brûlée 0,240 kg Basic mix à la Crème Brûlée 0,800 kg Liquid cream 0,480 kg Milk Heat cream and milk to approx. 80 C, add Basic mix à la Crème Brûlée and let boil for a short time. Fill the Tarte au Chocolat batter into the cups. Pipe in the Caramel Salé cream and bake at approx. 200 C* for approx. 20 min. After cooling down, pipe in Fruchti-Top Apple. Fill in Crème Brûlée and decorate as shown on the photo. * The baking temperature of max. 220 C as well as the baking time of 30 min. should not be exceeded.
