The chicken is then lightly breaded and flash-fried to give a crisp crunchy coating on the outside and tender meat inside. KFC Pops have a savoury, mild garlic flavour and are lightly seasoned. KFC Pops and Sprinkles are served with a choice of flavoured sprinkle sachets. The cooking process has been carefully tested to achieve excellent results relating to product quality and food safety every time. This is why the product is cooked f an exact number of minutes and at exact temperatures, which cooks the product thoughly f food safety reasons and best brings out the flavour of the seasoning. Hygiene and Sanitation 5 minutes The 65 oil o Cmust be to the level shown inside the cook pot. As in all areas of food preparation, wash your hands with liquid antimicrobial soap befe and after preparing any food products. Wash hands with warm water and use antimicrobial soap. Wash f a minimum of 20 seconds. Perfm Start-up Adjust Oil Levels Refer to: Equipment CSL f the start-up steps f the equipment you are using. Select Cook Cycle, Press EXIT COOL Key Press the EXIT COOL key to start the heating process. As the Fryer heats the temperature will show on the display. Press the appropriate button f the amount of Pops you want to cook. The red light above the button will light up. The shtening will heat to drop temperature. Coat Baskets with Oil Dip the cooking basket into the oil befe using them to prevent product from sticking onto the basket. Hang basket to drain (approximately 30 seconds). Place basket on a Bun tray. The cooking basket will be hot after it has been dipped into the oil. This is especially imptant when preparing raw product f cooking. Raw product may contain bacteria that could spread to other foods if proper hygeine, sanitation procedures and standards are not followed. Stir Oil Do not remove product from the Walk-in freezer until you are ready to cook them. Once you have removed the required number of Pops, return those remaining in the bag to the Walk-in freezer immediately. When the display reads drop, stir the oil in the cook pot in Collectramatics, Wells and Henny Penny 4-Head Fryers. Collectramatic and Wells pots: Take care not to deep stir oil in the collect. Load KFC Pops Use KFC Pops ptioning cups f frozen ptioning of minimum cook quantity in out of peak times. Place the required amount of KFC Pops into the cooking basket and shake over a Bun tray away from the fryer to remove any excess crumbs and ice crystals. If any KFC Pops are stuck together, separate them. Discard any damaged pieces. Do not hang the basket of KFC Pops over the fryer. If this is done, the KFC Pops will begin to thaw out and the product will be soggy when cooked. Wait f the display to read drop again to ensure that the oil has reach the crect temperature befe lowering the basket slowly into the oil. Start Cook Cycle Single Vat Open Fryer: When cooking me than one basket of KFC Pops at a time, lower both baskets into the oil at the same time. Once a single basket has started cooking, under no circumstances must a second basket of KFC Pops be dropped until the first basket has completed its cook cycle. This results in a high risk of undercooking product. F Double Vat Open Fryers: Slowly lower the baskets into the oil. F Collectramatic, Wells and Henny Penny 4-Head Cookers: Slowly lower the basket into the oil. Do not close the lid. Press the programmed button to start the cooking cycle. Shake Basket During Cooking A pre-alarm beeper will sound after 30 seconds of cooking time, as a warning to shake the basket in the oil, to ensure that the KFC Pops do not stick together and that the pieces brown evenly F Open Fryers, do not lift the basket out of the oil while shaking it. F 4-Head Open Fryer baskets and Collectramatic / Wells Open baskets, when the pre-alarm sounds, lift the basket up and down once, without exposing the product. Do not remove from the oil. When computer buzzes done :Remove basket(s).press the button to stop the beeper /alarm.shake gently.drain f 5 seconds. Put in Holding Unit To prevent burns, use extreme caution when emptying the basket Remove preheated bun trays and U frames from UHC Display Cabinet (HCW 3/5). Distribute cooked product evenly on a solid Bun tray and place in UHC Display Cabinet (HCW 3/5). Use U-frames and dividers to separate batches of freshly cooked Pops from previously cooked Pops that are still within their holding time. Recd Discard Times Mark with a 20 minute hold time using the Hot & Fresh tags. When moving cooked KFC Pops between the UHC and the HCW 3/5, ensure that the discard time follows the product and is recded. Packing Specifications At the end of the holding time, discard any KFC Pops remaining. KFC Pops (if packed to der) is best to be packed from HCW 3/5 from front counter, from an UHC with flip dos. During peak times higher volume stes will need to pre-ption immediately after cook from behind the display cabinet. Periodically check pack counts to ensure packing standard. This is to minimise over packing and wastage. KFC Pops Box Assembly: 1.Lightly press the sides of the box together and push the base fold inwards on the fold line. 2.Fm a box shape by folding the two front and back foldlines. 3.Bend the two side flaps inwards after filling the box with KFC Pops. 4.Bend the front lid flap in along the foldline and close the box. Product Small KFC Pops Large KFC Pops KFC Pops with Sprinkles Skim Fryer and Filter Oil Packaging Specifications product into Small KFC Pops box. Small KFC Pops should be approx. 65 g (range 55 g 75 g). Do not shake tap box you will overfill. Close the lid flap. product into Large KFC Pops box. Large KFC Pops should be approx. 2 g (range 190 g 210 g). Do not shake tap box you will overfill. Close the lid. product into KFC Pops with Sprinkles paper cup. KFC Pops should be approx. 135 g (range 125 g 145 g). Fill cup to just below the rim. No piece of Pops should stick out over the rim (i.e not heaped). Do not shake tap cup you will overfill causing yield problems. Close with dome lid. F open fryer, use the skimmer to scoop particles from the fryer after each cook to reduce particle build up. Henny Penny 4hd cookers and Collectramatic to be filtered after 3 consecutive rounds. To check oil life, refer to: Oil Management CSL Clean Up & Leave Fryer in CooL Mode Leave cooker in CooL mode if not cooking again within the next 10 minutes.
