Gemista Vegetables stuffed with rice Ingredients (for six persons) Various vegetables (tomatoes, zucchinis, bell peppers, aubergines) Potatoes 1-2 large onions 1 cup of round granulated rice or risotto rice 1 tsp of concentrated tomato pure e Olive oil Parsley Spearmint or mint Cumin Sugar Salt and pepper Preparation Wash the vegetables thoroughly and scoop the lesh out. Blend the lesh in a pure e. Mince the onions, parsley and spearmint. In a skillet, saute the onions and the herbs in olive oil until they wilt, then add some of the vegetable pure e. Add the rice, salt and pepper and let it simmer until it is more than half cooked. Stuff the vegetables with the rice illing and place them in a deep baking pan. Coarsely chop some potatoes and place them around the Gemista. Mix the rest of the vegetable pure e, the concentrated tomato pure e and some olive oil and pour the mixture over the Gemista and the potatoes. Optionally, sprinkle the Gemista with some bread crumbs. If necessary, add water in the pan until it covers the potatoes halfway and replenish if needed. Bake in a preheated oven at 220oC for about an hour, until the potatoes are done. Chios Cooking Lessons 2016 4

Keftedakia Meat croquettes Ingredients 1kg of minced beef and pork meat 1 clove of garlic, minced 1 large onion, minced 2 crustless slices of stale bread 2 whole eggs, slightly beaten Parsley, minced Salt and pepper Some lour or bread crumbs Preparation Soak the bread in water and squeeze it very well to remove all excess liquid. Mix together the bread, the minced meat, the eggs, the onion, the garlic and the parsley. Add some salt and pepper. Shape the dough into small croquettes and roll them in lour or bread crumbs. Xoriatiki salata Ingredients Traditional Greek salad Preparation The key to this beautiful authentic Greek salad is bold lavours from super-fresh ingredients Tomatoes Cucumber or Chios cucumber( Xilagouro) Onion or scallion Caper Rock samphire (sea fennel) Feta cheese Olives Chop all vegetables in large pieces and put them all into a large salad bowl with feta cheese and the olives. Lemon Yogurt Dessert Ingredients 500gr strained Greek yogurt 1 can of sweetened condensed milk 1-2 lemons (juice and zest) Chios Mastiha powder Preparation Beat together the yogurt and the sweetened condensed milk. Add the lemon juice and zest and lastly, the Mastiha powder. Refrigerate for an hour and serve. 9 Chios Cooking Lessons 2016
Kolokuthokeftedes Zucchini croquettes Ingredients 6 zucchinis 1 large onion, minced 1 whole egg, slightly beaten A handful of Graviera cheese A handful of bread crumbs Parsley, minced Dill, minced Spearmint or mint, minced Flour Salt and pepper. Preparation Grate the zucchinis and salt. Let them wilt for a few minutes and drain all excess juice. If necessary, squeeze with your hands to remove more water. In a large bowl mix together the drained zucchinis, the egg, herbs, onion, cheese, bread crumbs. Then, slowly add lour to the mixture until it is irm enough to shape into croquettes. Shape into small croquettes and roll in lour. Fry in a skillet, in hot olive oil. Chios Cooking Lessons 2016 10
