Once in decline, Beppino Occelli began reviving the town of Valcasotto in 1976 by restoring the village s buildings and turning them into affinage facilities. The resulting affinage rooms are beautiful rock cellars where humidity is controlled by gravity-fed, pure spring water brought in by wooden troughs. Beppino Occelli is so committed to saving food traditions that a Slow Foods classroom, certified by the Institute of Gastronomy, has also been set up in Valcasotto, making this town a true culinary destination. Today about 40 people live and work in Valcasotto, tending to the cheeses as well as maintaining a lovely inn and restaurant, and continuing the restoration of the village buildings. Occelli cheeses are a beautiful expression of the area s terroir, and we are proud to offer three extraordinary options. The cheeses are crafted using old world techniques, and as they mature the master cheesemakers will determine what treatment will be utilized to bring these special cheeses to their full potential. 28794 Occelli with Barley Malt & Whiskey (4 / 1.75 kg) Coated with malted barley and whiskey after an initial aging period, this cheese is sweet, sharp, and dense, with a definite touch of whiskey. 28793 Occelli in Chestnut Leaves (4 / 1.75 kg) Wrapped in chestnut leaves, this cheese is striking. It starts with a yoghurt tartness, and finishes with notes of brown sugar, and contains a paste that is dense and fudgy. 28795 Occelli with Hay & Beer (4 / 1.75 kg) Wrapped in spring hay from mountain pastures and soaked in Italian beer, the cheese gives off a bright floral aroma and has a dense rich texture.
