Reduce heat to low and simmer until cauliflower is tender. Season with salt and pepper. Serve.

Add the olive oil and the eggs. Follow with the sweet potatoes. Cook for 5 minutes, top with the bacon and chives and fold over. Continue cooking until eggs are set. Serve. Lay on a parchment lined sheet pan. Toss the remaining oil with the vegetables and spread on the pan with the chop. Roast for 25-30 minutes until vegetables are tender and pork is cooked through. Serve.
