Their 14 hectare estate, named after the current generation s grandfather, Henri and planted with 60% pinot noir and 40% chardonnay, is one of the best of the commune. It is an extremely reliable source of both reds and whites, and unlike many Saint-Aubin domaines, the Prudhons have no plans to convert more to white - they enjoy making the reds so much. Both The Society s Exhibition red and white Saint-Aubin come from the Prudhon stable. The white is a pretty chardonnay, part-fermented and matured in lightly toasted barrels which infuse it with just the right amount of oak. Like its white counterpart the red from the village of Gamay, but made from pinot noir, displays the charm and drinkability characteristic of the commune. Of the red premiers crus, Le Sentier du Clou has the most depth and tannin. Of the 8 white premiers crus Murgers des Dents de Chien, Chatenière and Remilly are particularly fine which is not surprising given their proximity to Puligny-Montrachet. In Puligny itself is Les Enseignères which is one of the best vineyards for village Puligny sited just below Bâtard-Montrachet. At the very top of the slope, premier cru La Garenne produces taut and mineral wines which relax after a few years in bottle.

page 4 memberservices@ Producer : Etienne Sauzet Consistently fine from year to year, with trademark richness and elegant class, the wines of Etienne Sauzet are some of the most sought after in Puligny-Montrachet. It was established by the eponymous Etienne Sauzet when he inherited some vines in the early 1900s; he added to these in the 1920s, and bought vines in several premiers and grands crus vineyards in the 1950s. In 1974, the year before his death, he was succeeded by his granddaughter Jeanine and her husband Gérard Boudot, and they have recently been assisted by the fourth generation of the family to be involved, their daughter Emilie and her husband Benoît Riffault. In the 1990s, Jeanine shared her inheritance of the domaine with her two brothers Henri and Jean-Marc Boillot both of which have their own domaines. Jean-Marc decided to remove his share of the vines from the domaine, prompting Jeanine and Gérard to acquire several new premiers crus and grands crus [either premiers and grands crus or premier and grand cru sites], and also to launch a négociant business so they could buy in grapes. Bought-in fruit still constitutes around a third of the blend, and includes grapes sourced from three premier cru vineyards. As they assemble the fruit of their own domaine and bought-in grapes, they have to choose either to label the wines separately as domaine or négociant, or to mix them both. They choose the latter course so cannot claim domaine status. Etienne Sauzet now owns 10 hectares of vines (including a small amount in Chassagne-Montrachet), farmed organically since 2006 and which have been biodynamic since 2010. The family has seven vineyard sites in Puligny- Montrachet as well as 6 premiers crus. Of these, La Garenne has the crispest acidity thanks to high altitude and poor soils. Le Champ Gain is lower down, and has deeper, redder soils, resulting in softer and rounder wines. Wines from Les Referts are bold and ripe, and next door, Les Perrières has younger vines planted on stonier, better-draining soil, but its wines are still powerful. Further up the hill are the domaine s final two premier cru vineyard sites, Le Champs Canet and Les Combettes, whose excellent balance of clay and chalk soils are reflected in the quality of their wines. Grapes are pressed in whole clusters using a pneumatic press, before being fermented in casks on their lees, with yeast added only in the most difficult years. Since 2000, a lower portion of new oak has been used for ageing: for premiers crus this is between 20 and 33%, whereas grands crus age in 40% new oak. The wines spend a year in oak then a further six months in stainless-steel tanks, remaining on a proportion of their lees, before the village wines are bottled in December and January, followed by the premiers and grands crus in February and March.

He is also a perfectionist and ruthlessly honest about his wines, which drives him to even greater achievements. After starting off with a tiny property, he now has a domaine of 7 hectares, mainly of village Meursault, including a number of choice lieux-dits, among them Meix-sous-le-Chateau, Tessons and Clous, with a little Puligny-Montrachet in the premier cru of Les Referts. His goal is to express, and bottle, the nuances of each of his plots as honestly as possible, whether premier cru or unclassified vineyard. Fichet wines are powerfully concentrated, yet fresh. In the vineyard, he is an advocate of ploughing, to cut off the superficial roots which can rapidly take up surface water. This encourages the main roots to penetrate deeper into the soil to supply the right quantity of water to the vine in times of drought, flood, or anything in between. That, in turn, regulates yield, and also seems to promote increased acidity in the grapes. In the winery, the magic ingredient is a long, leisurely period of élévage eighteen months is par for the course. Fichet favours a combination of 500l and 225l barrels and a lowish percentage of new oak, which does not exceed 30% in any year. All of which focuses clearly on the wine itself, and accounts for the striking clarity and depth achieved by Fichet with remarkable consistency, year on year.

It was founded in 1850, and the recent managers of the estate have been Jean-Loup Michel who began in 1968. He was joined by his nephew Guillaume Gicqueau-Michel in 2007 who has helped bolster the management of the domaine and he has brought some new ideas, such as the switch to natural yeasts from the 2008 vintage. Eight people now work full time at the domaine. The domaine extends to 25ha, comprising Petit Chablis, Chablis and premiers crus Vaillons, Montmains, Butteaux, Séchets, Forêts, Fourchaume, Vaulorent and a big holding of Montée de Tonnerre, 4.30ha. Grands crus include Vaudésir, Grenouilles and Les Clos. The Petit Chablis and Chablis are machine harvested, but the premiers and grands crus are harvested by hand. The wines are fermented and then held on lees to develop aroma and flavour. There is enough tank space to hold two harvests, so bottling is never rushed. The wines are fined if necessary but not cold stabilised, so some small tartrate crystals can form in the bottles, which are harmless. The Petit Chablis is very well sited, coming from vines above the grands crus. There are two bottlings of the Butteaux, and the vieilles vignes one is quite superb. The Montée de Tonnerre vineyard, now about 40 years old, also produces a wonderful wine. The label features the domaine buildings including a large round tower which is a pigeonnier or dovecote.

Further up the hill are the domaine s final two premier cru vineyard sites, Le Champs Canet and Les Combettes, whose excellent balance of clay and chalk soils are reflected in the quality of their wines. Grapes are pressed in whole clusters using a pneumatic press, before being fermented in casks on their lees, with yeast added only in the most difficult years. Since 2000, a lower portion of new oak has been used for ageing: for premiers crus this is between 20 and 33%, whereas grands crus age in 40% new oak. The wines spend a year in oak then a further six months in stainless-steel tanks, remaining on a proportion of their lees, before the village wines are bottled in December and January, followed by the premiers and grands crus in February and March.
