FACTORS AFFECTING ANTHOCYANIN COLOR STABILITY ph Our colors perform best in applications at ph 3.0 to 4.5 ph Color Intensity Color Shade Color Stability 3.0 Highest More red More stable 3.5 4.0 4.5 Lowest More purple Less stable Vitamin C (Ascorbic Acid) Reacts with dissolved oxygen If the beverage is bottled without efforts to reduce the oxygen level, the ascorbic acidoxygen reaction will produce minute amounts of hydrogen peroxide which then attacks the anthocyanin molecule, degrading the red color.
