As a team, we decide where to go and what activities we would like to do. On January 22nd, a small group of us went to Lollypop Farm and saw animals we would like to adopt. Even though we didn t adopt any animals that day, we are in the process of researching pet(s) to have at The Freedom Center. This is a picture of us at Lollypop Farm. FRENCH ONION SOUP WITH CHEESY CROUTONS With croutons on top, you can dig right in to this French onion soup! By Rachael Ray INGREDIENTS 6 medium onions 4 tablespoons butter 3 cloves garlic, finely chopped 2 fresh bay leaves 2 tablespoons fresh thyme, finely chopped Salt and pepper 1 cup dry white wine 4 cups beef stock (32 ounces) 2 tablespoons Worcestershire sauce 1 baguette, ends trimmed, sliced into 16 rounds about 1-inch thick 1/2 pound Gruyère cheese, shredded 4 tablespoons good quality dry sherry (optional) Serves 4 PREPARATION Heat a heavy soup pot over medium heat while thinly slicing the onions. Add the butter to the pot and melt. Add the onions, garlic, bay leaves, thyme, salt and pepper and gently caramelize, stirring frequently, for 30 minutes. If the onions begin to brown too quickly at the edges before they caramelize, turn the heat down a bit. Deglaze the pan with the wine, then let reduce for 1 minute while stirring. Add the stock and the Worcestershire sauce and simmer for 15 minutes more. Meanwhile, place an oven rack in middle of the oven and heat the oven to 250 F. Place a cooling rack over a baking sheet and arrange the bread slices on it. Toast the bread for 15 minutes. Switch the broiler on. Top the bread with lots of mounded cheese and broil for 2-3 minutes to melt the cheese. Ladle the soup into shallow bowls and stir in a tablespoon of sherry per bowl, if desired. Set four cheesy croutons into each bowl and serve.
I sit or stand behind a plastic table, It is loaded with nothing but lumber, With these stacks so high, I am left only to wonder, Just who s is this, And why is it so high, A few hammers surround me, I find that nails are aplenty, My personal space has now become, A closet full of wonderment. Just a few onlookers pass by, Most just to say hi, Some are in pure amazement, They just stand and stare, Wondering, Is this man for real? I point to the lobby and say Those only took me a half a year! Written by Cory Scott Templar
My Dear Valentine. According to your legend, You felt my love long ago, Branded and marked for you, I chose to love thee. Now in our twentieth season, The leaves never did fall, Yet our trees have flourished, As have we. You have filled my heart forever, It shall never love another, Our tough times have fallen way short, Here is a rose and a heart, will you be Mine? Written by: Cory Scott Templar
