Maturing Bottles : 100 % in tank, on the lees during 48 months : 75cl Loire Valley bottles. A new appellation for our Muscadet Sèvre & Maine We got engaged in this new appellation development already 13 years ago. Our aim is to get our typical terroir recognized. First work was to show how specific are the cuvées we developed : from selected plot, with real complexity, typical from their terroir, and having great aging potential. Our Muscadet Mouzillon-Tillière was born on hills above Sangueze river, on gabbro and amphibolite subsoil. Gabbro is a magma rock with exceptionnal density. Settled on this sub soil, our vines take time to get ready : winegrowers from this place are most of the time the last ones to harvest Muscadet from Sèvre & Maine area! This is absolutely necessary to obtain plain maturity of grapes. For the same reason, our wines require a long maturation time on the lees, to fully express their typical minerality Our Mouzillon-Tillières is elegant and powerfull wine, with thyme and spices notes. To be served at 9-12 C. This great white wine is delicious when served with creamy fish, white meet, foie gras and matured cheese.

Vinification 20 % had a pellicular maceration. Temperature maintained at 18 C, then slowly increased up to 21 C, at the end of fermentation. Fermentation duration : 20 days. Stirring of the lees once a week during one month, then twice a month during 3 months. No fining, filtration just before bottling. Maturing : 100 % in tank, on the lees during 7 months. Bottled mid-april. Bottles : 75 cl Muscadet bottles, «sur lie» mentionned. Tasting notes: Our Muscadet Sèvre & Maine sur Lie is vinified in order to be so charming, refreshing and slightly beady. It gives highest pleasure within 3 years after harvest. To be served at 9-11 C. As a youg wine, our Muscadet is delicious with oysters and more generally sea food, fishes and crabs. It is a also great at aperitif.
