A FAMILY PASSION Andros story is set in the verdant Lot fruit region in south-western France, where the iconic Cère and Dordogne rivers converge. Its beginnings took shape at the dawning of the twentieth century, in 1910, with a small fruit and nut business. It is the story of a family s tenacious passion, not only for fruit, but also for their region. Generation after generation, their passion has grown, flourished, and been tirelessly pursued. Bold with passion and wealthy with knowledge, Andros stepped into its jam-making activity during the 1950 s. Thereafter, it was not long before the brands Bonne Maman and Andros developed their own reputation for quality, both within France and internationally. International recognition has not changed the bearing of Andros story: more than ever it is a tale of the pursuit of flavor; more than ever, a tale of the values of its origins; steadfastly told from a little village by the river.

These competitions, organized by Chefs for Chefs, make substantial contributions towards the perfecting of techniques and know-how, as well as assuring their dissemination, through the will and the new vocations that they incite. These events, along with some of the smaller initiatives that Andros supports, are essential to the preservation and the enrichment of the professions that they represent and carry with them important values that our company shares.

What fruit excellence requires.. In the field of fruit, the quest for excellence requires long preparation. The work is comparable to the cultivation of a tree where, to enjoy the return, each season, of beautiful fruit, there must first be good earth and vigour at the root. Natural recipes At Andros, our ingredients do not include any additives to correct or modify flavor, aroma, or color. To understand our quality, one must first understand the quality of our fruits, and of the transformation processes used, which are as delicate as possible. Dedicated growing sites The selection of the best varieties and origins is based on the sum of the knowledge acquired over time by our team of agronomists. Patiently, they have built lasting partnerships in the form of dedicated plantations, providing growers with secure, long-term incomes. Our dedicated cultivation programs are unique in France and guarantee us 14,000 tonnes per year of fresh fruit that meets our discerning needs. Working with fresh and ripe fruit Even when rigorously selected, a good fruit is only good when ripe. In order to guarantee flavor, we have put in place a unique network of factories (six in Europe alone) each strategically located within the best fruitgrowing regions, and all working with fresh fruit that is harvested and delivered at optimal ripeness.

ANDROS FROZEN INGREDIENTS, MATERIAL FOR CREATION Our range of frozen purees, compotes, and coulis is made within the Lot region, in a factory dedicated to the production of ingredients and products for professionals. QUALITY, ALL YEAR LONG This assures a superior quality that is consistent, irrespective of the season as opposed to fresh fruit, which is often variable in quality and, sometimes, disappointing in flavor. INSPIRE YOUR CREATION It does not contain any colors or flavors natural or otherwise meaning a pure and natural product, strong in flavor and color, which leaves you free to imagine and create. A VERY SIMPLE USE It offers ease of use and storage, permitting consistent recipes and stable portion costs for the whole year. LOOKING FOR TASTE It is made using better ripened fruits and, as such, carries a more developed flavor than the vast majority of commercially available frozen fruit.

SUGGESTION OF USE HAZELNUT MANDARIN For 3 entremets (16 cm Ø) MANDARIN JELLY 525 g mandarin puree 23 g glucose 30 g lemon puree 15 g caster sugar 45 g inverted sugar 12 g pectin NH glaze In a pan, heat up the mandarin and lemon purees, the inverted sugar and glucose. Fold in the caster sugar mixed with the pectin. Bring to the boil. Pour100 g of mandarin jelly into 6 circles 14 cm in diameter. Deep freeze. MANDARIN ICING 250 g mirror glaze UR* Water-soluble orange coloring 100 g mandarin puree Mix the mirror glaze, mandarin puree and orange coloring. To finish off, heat the icing to approximately 50 C then spread it over the dessert. ASSEMBLY Cut out moist chocolate biscuit strips and line the circles. Pour the reconstituted hazelnut Streusel into the bottom of each circle and cover over with a layer of light hazelnut cream. Place a disk of frozen mandarin jelly in each circle. Repeat the operation and finish off the assembly with light hazelnut cream. Deep freeze. Spray the dark chocolate preparation over the biscuit while shielding the light cream and finish off the dessert with the mandarin icing. Decorate. SUGGESTION OF USE RASPBERRY & CHOCOLATE LINZER TART 4 tarts (Ø18cm) RASPBERRY COMPOTE DISC Heat the raspberry High Fruit Compote to 60 C Add the sugar and the pectin previously mixed Bring the mixture to the boil and boil for 2 minutes Pour into ring moulds of smaller diameter than the tart tins Deep freeze RASPBERRY COMPOTE DISC Andros Chef Raspberry High Fruit Compote 1200g Pectin X58 15g Granulated sugar 60g RASPBERRY ICING Sugar 480g Andros Chef Raspberry Puree 60g Water 540g Dextrose sugar 60g Pectin NH 30g Glucose syrup 54g Food coloring 4g RASPBERRY ICING Mix together the dextrose, pectin and 10% of the sugar Heat together the water and puree. Add the glucose syrup and caster sugar Heat to 60-70 C and add the dextrose-pectin-sugar mixture Bring to the boil and boil for 1 minute Leave to cool to 30-40oC and then apply to the frozen raspberry compote disc ASSEMBLY Spread a thin layer of chocolate ganache onto the pastry shells filled with chocolate biscuit.
