TOP TIPS for an eggcellent EASTER EGG HUNT Make sure your EASTER EGG HUNT is the STAR of the show with our FIVE TOP TIPS 1. Remember, not all of your eggs have to be chocolate! Why not get crafty? 2. Don t put all of your eggs in one basket - why not try colour coding your Easter Eggs so that all children (and adults!) taking part get the same number of eggs each? 3. The sky s the limit but definitely make sure to only hide your eggs in locations that are suitable for the age of your hunters. What about filling plastic eggs with some seeds that you can plant up together? 4. Be sure to set boundaries you don t want excited Easter Egg Hunters to trod all over your delightful daffodils! 5. Be prepared for all weathers although springtime is supposed to mean nicer weather, you can t always be sure! Make sure you have a backup plan in place in case the heavens decide to open on the day of your hunt. EASTER EGG

EASTER CHICK CUPCAKES Bake it yourself EASTER TREATS INGREDIENTS 250g butter (unsalted) 250g unrefined golden caster sugar 4 Eggs 1tsp lemon extract 250g self-raising white flour 3tbsp milk (semi-skimmed) 1tsp baking powder FOR THE BUTTERCREAM 500g unrefined golden icing sugar 160g butter (unsalted) softened 3tbsp milk (whole) 2tsp vanilla extract FOR THE DECORATION Yellow sugar paste icing Orange sugar paste icing Black writing icing METHOD Preheat the oven to 180 C (160 C fan, 350 F, gas mark 4). Line 2 cupcake trays with 24 cupcake cases. Put the butter and sugar in a bowl and beat until pale and creamy. Add the eggs, one at a time, and beat until well combined. Add in the flour, baking powder and lemon extract and fold into the mixture. The mixture should be of a dropping consistency, if not add a little milk. Divide the mixture between the cases and bake for 20 minutes. Remove from the oven and cool on a wire rack. To make the buttercream, beat together the butter and icing sugar, adding the milk and vanilla extract to flavour. To make the chick decorations, roll out the yellow sugar paste icing and use a small circular cutter to stamp out the chick shape. Roll two smaller pieces of yellow sugar paste icing into balls and flatten for the wings. Attach to the chick s body by lightly brushing with water. To make the beak, shape a small piece of orange sugar paste icing into a triangle shape. Secure to the centre of the yellow sugar paste icing with water. Use black writing icing to pipe two dots to make the chicks eyes. Place the decoration on top of the buttercream and gently press down to keep in place. Tip: For a real Easter treat find ovenproof egg cups and fill up to three quarters full with the cake batter and bake for about 20 minutes or until cooked. Leave to cool before decorating. EASTER EGG ROCKY ROAD INGREDIENTS 500g milk chocolate 100g mini marshmallows 100g mini chocolate eggs 100g digestive biscuits 4 crème eggs, broken 50g fudge pieces METHOD Line a square tin with greaseproof paper. A standard brownie tin would be ideal. Break the milk chocolate into chunks and place them in a bowl above a saucepan of boiling water. Gently melt, stirring occasionally to ensure all the chunks are melted. Whilst the chocolate is melting, put the marshmallows, broken up digestive biscuits, fudge chunks and crème eggs into a bowl and give it a mix so they are evenly distributed. Once all the chocolate has melted, pour in the bowl of ingredients and give it a good mix work quickly as it sets very quickly! Pour the mix into the tin. Now, add the mini eggs into the mixture so that they are still visible from the top. Place the tin in the fridge and they will be ready to eat within 2-3 hours. Cut into bite size pieces and serve.
