As the gospel of rum continues to spread across the globe, we thought we d do something ambitious by putting together a drinks list that includes not only the best of the Caribbean but also the wider world. OPIUM BELIZE XO Our friends at Opium Cocktail and Dim Sum Parlour in Chinatown loved this rum so much they bought a whole barrel of it. When we tasted it we knew we had to help them drink it! Aged in American Oak in Belize for six years before being finished in ex-pierre Ferrand Cognac casks for two years. 42% abv. 10
