PALATE = The palate delivers a delicious balance of strawberries and cream. This wine is made to a soft dryer style with integrated minerality and very little tannin. WINEMAKERS COMMENTS = The Goose Island Rose is made to express the positive attributes of Serafino s premium estate vineyard. The Rose is made to a natural winemaking process incorporating minimal intervention. A premium parcel of juice is run off from a selected Sangiovese ferment to capture the optimum colour and flavour profile to suit our vibrant and crisp style Rose. The juice is then fermented individually in a stainless steel fermenter over 10 days where it develops structure and complexity. This wine does not see any oak treatment as we aim to capture every essence of the fruit available. PALATE = This Cabernet Sauvignon has purity of fruit and freshness of flavor, with mint, black pepper, sage leaf, black currant and black cherry complemented by fine supple tannins. VINEYARDS = The fruit is sourced from a combination of our Estate grown vineyards including Communication and Little Road vineyards in McLaren Vale, South Australia. WINEMAKERS COMMENTS = The fruit is destemmed and fermented in a combination of stainless steel and open fermenters using selected yeast strains. The ferments remained on skins for a period of 8 days in order to keep the tannins soft and supple and the fruit bright and fresh. Post ferment the wine is pressed and allowed to undergo malolactic fermentation in tank. The fruit was gently extracted to give a soft round, flavorsome palate. This achieves the best fruit characters. The vineyard in Clare achieves rich and fragrant fruit. Fermentation temperatures were cool, allowing time for moderate extraction from the skins via a daily pump over.
