TASTER S NOTE Straw-yellow colour with a lemony green sheen. White stone fruits predominate on the nose, with certain hints of fresh herbs. Fresh on the palate. Fatty, unctuous. Slightly bitter aftertaste, particular to this variety. GASTRONOMY Serve between 8ºC and 12ºC. Ideal for baked fish and is a perfect pairing for salted meats. PRODUCTIO Controlled fermentation at 2 ºC followed by 24 months in oak casks and a minimum of 3 months in the bottle. TASTER S NOTE With a dense centre and a clean, dark cherry colour,its edges are topped off with a brownish colour. The smell evokes very ripe wild berries, honey and chocolate liquor, with a very well-integrated aroma of the oak cask. GASTRONOMY Serve between 17 ºC/ 18 C. Ideal for accompanying meat stews, roast lamb, chicken and cold meats. MANUEL QUINTANO D.O La Rioja L 0.75 ALCOHOL CONTENT 14 % VARIETY Tempranillo (70%) Garnacha (30%). PRODUCTION Controlled fermentation at 28ºC, 30 months in oak casks and a minimum of 24 months in the bottle. TASTER S NOTE Claret coloured with a bright appearance in the centre and cherry-coloured at the edges. The very ripe, smoked aromas of fruit of the forest, raisins and liquor initially predominate. Leaving it to breathe allows the appreciation of the variety of the tones of this wine. You first notice the hints of cinnamon and relish, with the spicy aromas becoming more clearly noticeable after a little time. GASTRONOMY Combine with roast meats. POLLONI SPUMANTE BRUT L 0.75 ALCOHOL CONTENT 11 % VARIETY Garganega, Chardonnay, Pinot Bianco. PRODUCTION The first fermentation takes place off controlled conditions not exceeding 18 C, approximately 8-10 days. The second fermentation is very slow - at 14 C. Approximately 30/40 days. TASTER S NOTE Polloni Spumante distinguishes itself by straw color with a beautiful creamy mousse and a lovely perfumed fruity aroma with hints of citrus, peach and apple and floral notes of white flowers. GASTRONOMY While this would make a lovely aperitif, it has enough character to accompany grilled fish and fruit desserts. PURATO IGP Terre Siciliane L 3L 0.75 ALCOHOL CONTENT 13 % VARIETY 100% Nero d Avola. PRODUCTION Fermentation takes place at controlled temperatures not exceeding 28 C with frequent pumping over in the early stages in order to ensure optimum color extraction and soft tannins. After fermentation, the wine is racked off and the malolactic fermentation takes place. TASTER S NOTE Purato Nero d Avola has a wonderful structure, yet has soft tannins and is very approachable. GASTRONOMY Packed with red berry fruit flavours, it is ideal with red meat and tomato based pasta sauces. AVULISI IGP Terre Siciliane L 0.75 ALCOHOL CONTENT 13,5 % VARIETY The 100% organic grapes PRODUCTION After racking the wines ages in the same barriques for at least 12 months and then for a minimum of six months in bottle before being released. VOLPETTO DOCG Chianti L 0.75 ALCOHOL CONTENT 12,5 % VARIETY A blend of mainly Sangiovese, with a small percentage of Cannaiolo. PRODUCTION The grapes are destemmed and gently crushed. Fermentation takes place in stainless steel tanks at a controlled temperature of 25 C with macro oxygenation that lasts for 12 days. TASTER S NOTE Volpetto Chianti is well structured and full bodied, lively and intense. GASTRONOMY To be served with red meats, roasts, pasta with meat sauce and cheese. CHIOCCIOLI CHIANTI CLASSICO DOCG Chianti Classico L 0.75 ALCOHOL CONTENT 13 % VARIETY Blend of 85% Sangiovese, 10% Merlot and 5% Cabernet Sauvignon PRODUCTION Fermentation takes place in small stainless steel tanks, conical vats. After a long marceration on the skins the wine is poured directly into French oak barrels. It rises in barriques sur lies for 14 months. AMARONE TAJAPIERA DOCG L 0.75 ALCOHOL CONTENT 14,5 % VARIETY Corvinara (0%), Molinara (30%), and Rondinella (5%); plus a further 5% of other local grape viarieties. PRODUCTION In October, only the smallest, driest and most mature grapes are selected for picking. Due to the grapes high sugar content and natural yeasts, a long, slow fermentation is carried out in stainless steel tanks at a temperature of 25 C. TASTER S NOTE Deep and vibrant red in colour with an intense bouquet of blackberry fruit. The palate is rich, very full-bodied, and well-rounded. GASTRONOMY Perfect accompaniment to cold starters, seafood, foie and cheeses.
