The art of fire-roasting meats was born in the 17th century during the colonial period of Brazil. The creators of this unique cooking technique are the Brazilian cowboys, known as Gauchos. This cooking breakthrough tale occurred over 300 years ago, when an unknown Gaucho fire-roasted the first Brazilian churrasco (choo-has-sco) at a camp-side feast. The churrasco (choo-has-sco) tale has many versions, some say that the first fire-roasted meat was beef-ribs, others ribeye, but apart from nuances this unknown Gaucho changed the Brazilian cuisine forever. For this reason we see the authentic art of roasting fresh meat over hot stone coals, perfectly seasoned with rock salt as a mouthwatering metaphor for our culinary voyage to Brazil. As proud Brazilians who love our country s culture, tradition and obviously food, our founders envisioned a place that would take its guests to Brazil through a unique culinary experience. However the only way of actually realizing this vision is by passion and the wine culture apart from the obvious pairing reasons, shares the same passion that us Brazilians do in hospitality. Our wine collection was carefully crafted to magnificently pair our food offerings. With all the nuances wine pairing our goal is to transport you and your guest on a culinary voyage to the heart of the Brazilian cuisine through a unique wine pairing experience. WINE PAIRING SUGGESTIONS F I L E T M I G N O N Tenderloin CABERNET SAUVIGNON From France to the world, this varietal is one of the world's most widely recognized red wine grape. Its classic profile is full-bodied wines with high tannins and noticeable acidity. PETITE SIRAH It is varietal of red wine grape primarily grown in Australia, California, France, and Israel. It is known as Durif and produces tannic wines with a spicy, plummy flavor. P I C A N H A Prime Part of Top Sirloin MALBEC Is a purple grape variety used in making red wine. The grapes tend to have an inky dark color and robust tannins. BOURDEAUX BLEND Depending on its origin Red Bordeaux s classic profile varies from high in tannins and acidity to a softer, less tannic and lower alcohol. C O S T E L A Beef Ribs ZINFANDEL Is a red grape which produces red wines with strong flavors, aromas of berries, high alcohol content, strong tannins, and slightly spicy flavors. TEMPRANILLO This varietal delivers contrasting flavors of leather and cherries, searching to balance between earth and fruit. The finish is typically smooth and lingers with the taste of tannin.

WINE PAIRING SUGGESTIONS C O R D E I R O Lamb Chop & Leg MERLOT Famous for its softness and fleshiness this dark-blue grape is most likely to be found in the Bordeaux region of France and in areas of Italy, Switzerland, and California. CABERNET SAUVIGNON From France to the world, this varietal is one of the world's most widely recognized red wine grape. Its classic profile is full-bodied wines with high tannins and noticeable acidity. F R A N G O Chicken SAUVIGNON BLANC Is a green-skinned grape variety originated from the Bordeaux region of France. It usually has a crisp, dry, and refreshing profile. CHARDONNAY This varietal is a very neutral, with many of the flavors commonly associated with the grape being derived from such influences as terroir and oak. P O R C O Pork Ribs & Loin ZINFANDEL Is a red grape which produces red wines with strong flavors, aromas of berries, high alcohol content, strong tannins, and slightly spicy flavors. PINOT NOIR Is a red wine grape variety grown around the world, mostly in the cooler climates. It is mostly lightly colored, medium bodied and low tannin wines.
