PASO ROBLES COLLECTION Rosé THE WINE Lovely pale apricot in color, this traditional, old-world styled Rosé proffers tantalizing aromas of peaches and cream, flan, vanilla crème brûlée and salt water taffy. Secondary layers reveal notes of rose petal and cinnamon; with apricot and orange peel accents. Crisp, light and airy on the palate, ethereal flavors of strawberry, gala apple, papaya and lemon chiffon are accompanied by nuances of peach sorbet, tangelo, rhubarb and pecan. Exceptionally clean, refreshing and persistent finish rounds out this delightful wine, leaving juicy essences of peach, apricot and strawberry. THE VINTAGE If there was ever a perfect vintage, 2016 would be it. Bud break started early March and the warmth set in very quickly. The onset of veraison came rapidly and earlier than normal because of a very warm June and July. There were a few scares because of the raging fires throughout the region but fortunately our grapes were not affected. In the month of August, approximately one week away from harvest, very cold weather set in and the sugars stopped accumulating for several weeks allowing the perfect hang time to occur. The 2016 vintage allowed us to make our darkest, most concentrated wines yet. The longer hang time led to supple and very well integrated tannins. The 2016 wines will be long lived. PASO ROBLES COLLECTION Chardonnay THE WINE Fragrant nose displays scintillating aromas of pineapple, Asian pear, vanilla crème and toasted almonds, with notes of allspice and honeysuckle. Creamy, smooth texture with crisp and vibrant acidity, the palate delivers flavors of white peach, casaba melon and lemon zest, along with underlying tropical notes of banana, papaya and pineapple. The finish is long and very clean, leaving lovely sensations of citrus and vanilla with just a hint of star jasmine. THE VINTAGE The season started out on track with a warmer month of March and April. Bud break started early march and the soils benefited from a little more rain than the previous few years. May brought very cold temperatures to the mountain and strong winds which resulted in severe shatter. As a result of this, yields were 50% or more down from normal. At last, Heat finally arrived early June which allowed the small crop to ripen beautifully and on time by early September. 2015 did not see many heat spikes during the vintage and was a cooler vintage than normal. Because of the low yield, flavors are intense and balanced and tannins are very well integrated. Notes of graphite and crushed stone mingle with just a hint of cool mint. Robust and full bodied, an undercurrent of restrained power is palpable just below the surface at the core of this wine. Firm, fine grained tannins provide ample backbone for the layers of boysenberry, black cherry, licorice and dried herb flavors. Reserve CABERNET SAUVIGNON THE WINE A classically styled Cabernet with a highly perfumed nose offering black cherry, cassis, anise and black olive, together with notes of plum, graphite, dried herbs, crushed gravel and Oregon blackberry. Secondary aromas of leather, cigar box and incense reveal deep, harmonious complexity. Powerful, bold and brooding, bursting with layers of black and blue fruits. Boysenberry, blueberry, spicy currant and black plum with accents of sandalwood and toffee. Dark roast espresso, hints of vanilla and lavender potpourri. Flavors are focused in their intensity and beautifully structured, balancing power and finesse throughout the mid palate. A continuing evolution of pure fruit flavors is experienced with this wine s amazingly long and elegant finish. Will age extremely well. THE VINTAGE The 2014 vintage was the driest years on record on our mountain. The lack of water caused early bud break, as well as smaller clusters and berries known for making wines with intense flavors and concentrated dark fruit. Spring was cooler than normal with only two days reaching 100 degrees by July. A light drizzle brought some moisture to the vines in August and gave the vines a little humidity to keep them going. Despite the severe drought, the entire mountain was either dry farmed or defcit irrigated by receiving one or two watering cycles in August. The month of August tends to define tannin quality on DAOU mountain and we could not have wished for a better August: Temperatures were often in the 70 s which allowed us to have more hang time on the vines and gave us a chance to craft wines that had the perfect tannin structure. Harvest started earlier than normal and most of the mountain was harvested before several heat waves hit in the month of September. Called by Daniel Daou the vintage of his career, the 2014 vintage has allowed us to craft unique wines that showcase the potential of DAOU Mountain. Because we were able to achieve perfect ripeness, the wines will approachable be early yet mature nicely for years to come. It has a serious, tightly wound and tannic feel, and will benefit from 2-3 years of bottle age and have 10-15 years of overall longevity.
