9 CHAMPAGNE & SPARKLING WINES While Monty Python argued over what the Romans did for Britain (actually Judea), there is no disputing what they did for the towns of the Champagne Region. They came, they saw & they mined the area s chalk. And they left behind them miles of underground galleries & cellars which now house millions of bottles of this exquisite elixir. The Champagne is divided into five sub-regions: Côtes de Blancs; Montagne de Reims; Vallée de la Marne; Côtes de Sezanne & the Aube. Every listed house has vineyards in these sub-regions & grows three permitted grape varieties:, Pinot Noir & Pinot Meunier. Once the grapes are harvested towards the end of September or beginning of October, wines are made & must remain in the Roman cellars for at least three years. After this extended rest in the cellars, Champagne reaches our tables; so enjoy it in good company. This is the most sociable of drinks after all. 10 LIGHT & CRISP WHITE WINES The wines in this section were quite simply made for seafood. Delicate plaice, roasted hake, steamed mussels or even Ticklemore Feta & fig bubble & squeak will all provide a lovely accompaniment. Just north of Beirut, this location was ravaged by civil war & placed demands on the family that most winemakers do not experience. Battle raged around the vines throughout the 1983 harvest & Serge had to be smuggled in by a small boat to make his wine. Similar conditions were endured in 1988 & 1989. Deep scarlet in colour, the nose displays mature red cherry, blackcurrant, tropical fruit & violets. On the palate, the velvety soft tannins reveal ripe red cherries, pear & blackberries, mixed with peppery cinnamon spice & chocolate on the long finish. Made in Southern Portugal from the Aragonez grape, in very small quantities, this is their answer to Spain s Tempranillo. In fact, George believes this is his best wine. It s really BIG. A peppery, spicy, massively full-bodied wine, perfect with meat dishes & heavy sauces. Once tasted, you will come back to it again & again. Alain Jaume et Fils, Haut du Brun, Côtes du Rhône, Rhône Valley, France, 2011 Grenache, Syrah & Mourvèdre A wine for the brave. It carries a big punch: rich & spicy but still easy drinking. Bodegas Corral, Don Jacobo, Reserva, Rioja, La Rioja, Spain, 2005 Tempranillo, Garnacha& Mazuelo Rioja produces Spain's flagship red wines. Don Jacobo is not the most popular wine from Rioja in UK (yet) but in Spain it s a star. You can find it on most wine lists at Michelin star establishments. A wine spends about 25 months in oak barrels in cool cellars before being bottled and then aged for 2 more years. No one can say that the Hochar family are not truly dedicated to their craft. French farmers might be militant sometimes, but they don t really compare to Hezbollah, do they? This is one of their best vintages & features their most appealing blend. I know because I ve tasted them all back to 1985 GB. The perfect match for all lamb dishes, from Shepherds Pie to rack of lamb. Baroness Philippine de Rothschild, Domaine de Baron Arques, Limoux, France, 2004 Merlot, Cabernet Sauvignon, Cabernet Franc, Syrah, Grenache & Malbec This is intended to become the Opus One of France. Its Bordeaux-style blend is very deep & dark with a violet tint, opens on fresh blackberry & bilberry aromas with touches of strawberry & cherry. Round & smooth in the mouth, it has a rich, wellrounded structure & a silky mid-palate, elegantly combining distinguished tannins with generous flavours. The highly expressive finish, full, powerful & pleasantly textured, is characteristic of a wine with considerable potential. George tasted this vintage last Christmas. It is obviously now reaching its peak. It was simply stunning.
