Roll a juice orange on a table; press firmly to get the juice flowing. 2. Wash oranges. 3. Cut a little notch in the top of the orange and stick half a straw in the notch. 4. Encourage kids to squeeze the orange to get the most juice. Kiwi Bowls 1. Cut a kiwi in half around the middle making two boat-shaped halves. 2. Serve with spoon so kids can scoop fruit out of the kiwi bowl.

Cut celery and peppers into strips and cucumbers into slices. Keep cherry tomatoes whole (for children 3 and under, cut tomatoes in half to reduce risk of choking). 3. Place in cones, boats, or cups. Serve with or without dip. Get the kids to help prep the veggies or cut them ahead and store in a gallon-sized bag. Veggie boats and cups make a colorful splash grouped on a tray. Cones look perky propped in the circles on the side of a plastic milk crate. Look for veggies on sale!

Power Up 2 cups raisins 2 cups sunflower seeds 1. Combine raisins and sunflower seeds in large, gallon-sized bag. 2. Shake well to distribute raisins. 3. Put 1/4 cup into small cups, bags, or cones. Makes 16 servings. Chock full of protein, B vitamins, iron, and fiber, it s a delicious powerhouse! Keep portion sizes small (1/4 cup is the perfect size!!).

Pour 1/2 cup popcorn kernels into a brown paper bag and fold over twice. 2. Place bag, folded side down, in the microwave for 1.5-2 minutes, or until popping stops. 3. Put 1 cup popped popcorn into bowls or cups for serving. Serves 10. Set up a seasoning bar so each person can shake on their favorite flavors. Let each student pop their own bag of popcorn if time allows use 1/4 cup kernels per bag.

Lay quesadilla flat, put toppings on half, fold in half. 2. Place quesadilla in skillet or quesadilla maker. No oil needed. If using a pan, flip quesadilla after 1-2 minutes. 3. Cook until cheese is melted. 4. Cut into triangles. Serve with salsa and ow-fat sour cream. Guacamole is another great option!

Combine first 6 ingredients in mixing bowl. 2. Place 1/4 cup salsa into a cup. 3. Place 4-6 chips on top. 4. Serve with iced or fruit-infused water. Giving kids individual servings teaches about appropriate portion size, stops double dipping, and helps keep costs down.

This is usually cheaper and lower calorie than ordering individual sandwiches. Qdoba caters a good burrito bar. Put the accents on beans, veggies, and salsa. A baked potato bar is a great option. Microwave baking potatoes. Put out shredded cheese, veggies from the salad bar, and low fat sour cream. Pita pizza bar. Toast whole grain pitas. Put out tomato sauce, shredded cheese, and veggies. Bake or microwave until cheese is bubbly. If you order pizza, ask for whole grain crust, decrease the meat, add veggies, and go light on the cheese. Blot up excess oil with paper towels. 1-2 slices per person is plenty.
