PREP: 15 MINS TOTAL: 15 MINS YIELD: ABOUT _ 14-16, 1 ENERGY BITES Example: 4t e1t+1t. 1 cup ground (dry) oatmeal (old-fashioned oats) 1/2 cup ground almonds 1 ½ Tablespoons unsweetened cocoa powder 1 teaspoon vanilla extract 1/4 cup honey 1/2 cup almond butter ½ cup mini chocolate chips 1. Stir all ingredients together in a medium bowl until thoroughly mixed. Cover and let chill in the refrigerator for 15-20 minutes. 2. Once chilled, scoop with a 1 cookie scoop, roll into balls. Store in an airtight container and keep refrigerated for up to 1 week. NOTE: This recipe hasn't been tested with a natural/no-stir almond butter -- you may need more dry ingredients if you use one. Stir all ingredients together in a large bowl until evenly coated. Cover and refrigerate for 1-2 hours. (This step is important -- it makes the mixture easier to shape.) 2. Scoop (1 cookie scoop) & shape into small 1-inch balls. CRANBERRY PISTACHIO ENERGY BITES Kick up your energy with these simple and healthy no-bake Cranberry Pistachio Energy Bites! PREP: 15 MINS TOTAL: 15 MINS YIELD: ABOUT _ 30, 1 ENERGY BITES 8 ounces (about 1 packed cup) chopped dates 1/2 cup honey 1 Tablespoon chia seeds 1 Tablespoon ground flax seeds pinch of salt 1 1/2 cups ground old-fashioned oats (dry, not cooked) 1 cup shelled chopped pistachio nuts 1 cup dried cranberries 1/3 cup white mini chocolate chips (optional) 1. Combine the dates, honey, chia seeds, flax seeds and salt in a food processor, and pulse until smooth and combined. You should be able to stir the mixture -- if it is too thick, add in another tablespoon or two of honey. 2. Transfer the mixture to a large bowl, and stir in the oats, pistachios, dried cranberries, and white chocolate chips until evenly combined. Cover and refrigerate for at least 30 minutes. 3. Using a 1 cookie scoop, scoop cooled mixture to shape it into balls. Store covered in the refrigerator for up to 2 weeks. PREP: 10 MINS TOTAL: 25 MINS YIELD: ABOUT _ 20, 1 ENERGY BITES INGREDIENTS 1 cup ground old fashioned oats 1/4 cup flax meal 1 1/2 t. cinnamon 1/4 cup peanut butter (or soy butter) 1/4 cup canned pumpkin ½ teaspoon pumpkin pie spice 2 T. maple syrup 1 T. honey 1 t. vanilla 1 T. mini chocolate chips INSTRUCTIONS 1. 2. 3. 4. In a medium sized bowl combine all of the ingredients. Stir together all of the ingredients until thoroughly combined. Place the mixture in the fridge for 15 minutes. Using a 1 cookie scoop, scoop & roll the mixture into balls. Store the Pumpkin Pie Energy Bites in an airtight container lined with wax paper. Keep them in the freezer for up to a month. Super Seed Chocolate Protein Bites by Angela Liddon Prep Time: 10 minutes Cook Time: chill time: 20 minutes Keywords: freeze no bake raw cookies dessert quick snack nut-free gluten-free soy-free sugar-free vegan vegetarian dates Nut-free chocolate energy bites featuring hemp, sesame, and chia seeds! Ingredients (16 bites) 1 cup packed pitted Medjool dates (12-13 large) 1/4 cup hulled hemp seed 1/4 cup chia seed 1/4 cup sesame seed 1/4 cup cocoa powder 1/2 teaspoon pure vanilla extract 1/4 teaspoon cinnamon 1/4 teaspoon fine grain sea salt, or to taste 1/4 cup raw cacao nibs (or mini dark chocolate chips) Instructions 1. Add dates into processor and process until a chunky paste forms. 2. Add in the hemp, chia, sesame, cocoa, vanilla, cinnamon, and salt. Process until thoroughly combined. Pulse in the cacao nibs. The dough should be sticky when pressed between your fingers. If it s not sticky enough to shape into balls, add a small amount of water (a teaspoon at a time) and process until it comes together. 3.
