I P TH P U STORY D O IPPUDO was founded in 1985 in Japan s ramen capital of Hakata by Shigemi Kawahara, the internationally renowned Ramen King and CO of Chikaranomoto Company, which encompasses some of Japan s finest restaurants. There are over 70 IPPUDO restaurants in Japan, and more than 30 globally in New York, Hong Kong, Singapore, Sydney, Shanghai, Taipei, Guangzhou, Shenzhen, Seoul and Kuala Lumpur. IPPUDO has become the most popular ramen restaurant over the years. Kawahara was crowned Ramen King in 2005 and holds a place in the Ramen Hall of Fame after winning the championship 3 times consecutively between 1995-1998, on TV Champion Ramen Chef, a reputable Japanese television show produced by TV Tokyo. FOUNDR S PROFIL In Japan, there are more ramen restaurants than any other kind of restaurant. When our founder, Shigemi Kawahara, set out on his journey to become a ramen chef, he wanted to be the best among his peers. Ramen is a cosmos served in a bowl. The delicate balance of ingredients, broth and noodles is an art form in itself. Kawahara is often dubbed the Ramen King, having been crowned the title five times on various television programs and competition. He holds a place in the Ramen Hall of Fame after three consecutive wins on TV Champion Ramen Chef. Kawahara is a charismatic entertainer in the kitchen. As a young boy, he dreamt of being an actor. When he started his first IPPUDO restaurant in Fukuoka in 1985, he lived out his two dreams - restauranteur and actor - by being the consummate story-teller in the kitchen. He sees the restaurant as a stage where every employee plays a role like an actor. From cooking to serving, every move is choreographed to perfect timing, from the moment a customer arrives until the customer bids goodbye. Kawahara s philosophy - to continuously innovate to remain true - is to keep reinventing in the kitchen, redefining recipes for a dish that emerged over 300 years ago. Kawahara s reinvention of the Hakata-style tonkotsu (pork-based) ramen with its signature delicate, creamy broth, earned IPPUDO its global acclaim.
