ADELAIDE HILLS FIRST CUT SERIES COLOUR = Pale straw. AROMA = Lifted intense floral aroma with complimenting pear, white peach and sweet lychee. PALATE = Soft and rounded palate with the freshness of pear and peach fruits showing through the entire length of the palate. Balanced acidity gives life and compliments the great length of flavour with a clean refreshing finish. WINEMAKING = Machine harvested, crushed and must chilled, pressed off skins immediately to minimize colour pickup. Settled for 72 hours then racked off lees and fermented with a varietal enhancing yeast. Aged on yeast lees for 2 months, then clarified and bottled early to retain freshness. VINEYARDS = A blend produced from 2 vineyards in the Northern Adelaide Hills. The first vineyard at Paracombe is from 2 blocks 1 easterly facing and the other westerly, the westerly block has more tropical notes and the easterly block more pear. ADELAIDE HILLS FIRST CUT SERIES COLOUR = Pale yellow. AROMA = Aromatic and intense nose with rich tropical fruit, balanced hints of asparagus and cut grass with a hint of passionfruit. PALATE = Soft and rounded palate with the freshness of melon, guava and cucumber, balanced asparagus notes and passionfruit. Well balanced acidity with a very slight textural finish. Great length and intensity. WINEMAKING = De stemmed but not crushed, pressed off skins to stainless steel, 7% filled to old French oak and fermented in barrel while the remainder is clarified and fermented at cool temperatures using a varietal enhancing yeast. Left on lees for 2 months then blended and stabilized before being clarified. PALATE = The palate demonstrates all the hallmarks of great Cabernet. Mid weight yet structured, bright fruit with balancing acidity and a fine line of tannin creating a long dry finish, ideal for food. WINEMAKING = De-stemmed to a combination of open and static fermenters, Left on skins for between 6-8 days and pumped over 2-3 times per day. Pressed off skins directly to oak to finish secondary fermentation. Aged for 12 months in 10% new and 90% older French Oak before bottling. VINEYARDS = Selected from multiple sites through the McLaren Vale region, each displaying a unique site character which integrate well to form the final blend. Willunga area offers fruit with dark berries and hints of fennel with chewy tannins while McLaren Flat offers lifted floral notes and finer tannins and Blewitt Springs offering blueberry fruits and delicate structure. ALTERNATIVE SERIES COLOUR = Beautiful pale pink blush. AROMA = Lifted bright fresh fruit notes, white mulberry, red grapefruit zest and delicate early picked strawberries with a hint of rose water. PALATE = The palate demonstrates all of the hallmarks of what one of McLaren Vale s champion varieties can do as a Rose. Strawberries and cream, Turkish delight and bright red berries balance with a bone dry, crisp, Moorish acidity and a textural citrus pith finish. We challenge you to stop at only 1 glass. WINEMAKING = Destemmed, Crushed and chilled to the press. Held on skins for 6 hours to ensure minimal colour extraction, desired phenolic contact and structure. Fermented cold to retain brightness and delicate aromatics. Left on yeast lees post ferment for three months to build texture. VINEYARDS = Grenache was selected from a vineyard in Whites Valley, near the township of Willunga in Southern McLaren Vale. The geology of the vineyard is Christies Beach Formation which consists of alluvial fan clay, sand and gravel that has been washed down from the hills bordering McLaren Vale over millions of years of uplift and erosion. An early ripening site combined with early harvesting of the fruit gives bright perfumed fruit with strong structural tannins and plenty of natural acidity. WINEMAKING = Selectively harvested, whole bunch pressed with gentle pressing, separated into 3 portions, 1 partial solids ferment, two clarified parcels, all 100% barrel fermented in 40% new French oak and 60% 2 and 3 year old French oak. Partial MLF and lees stirred for 6 months, barrel selected and blended in January for bottling. VINEYARDS = Selected from a single vineyard at Kuitpo. A northerly facing slope provides the warmth to produce lifted stone fruit and tropical fruits while the cool nights maintain the elegance and mineral acid backbone which gives ageing ability and life to the wine. THE STAFF STORY = The Staff story revolves around the Hazel Tree. The Celts believed the trees that grew around them all held special powers. The Hazel Tree is arguably the quintessential Celtic Tree due to it s legendary position at the heart or entrance of the Otherworld. Since the times of the Druids down to the modern era Hazel wood was used to make robust Staffs to guide the wise along their path. The wood is flexible and yet strong and provides clean string lines. Plunged 3 x day for 8 days on skins then pressed of to finish ferment in barrel (new & used FO). Vineyard Batches kept separate until blending after 15 months maturation. VINEYARDS = Selected from three meso-climatic regions and four vineyards of McLaren Vale. The first from Seaview producing rich structural wines with darker fruit and violet lift. The second two from McLaren Flat produce elegant lifted wines with fine tannins, and are from the vineyard surrounding the winery and towards Blewitt Springs, The fourth from Blewitt Springs produces wines with elegant red fruits and hints of mint. THE PROTECTOR STORY = The Celts believed Hazel to have protective powers. If you wore a badge of Hazel you would be protected from evil spirits, sea captains would wear twigs of Hazel woven in their hats to protect themselves from the wickedness of the sea. Irish Mythical Legend Finn McCool used a shield made from Hazel to protect him. Cabernet Sauvignon s high tannin content symbolises this protection by protecting the wine during the ageing process. ORIGIN SERIES COLOUR = Ruby red. AROMA = Deep, dark and brooding, the nose is a true reflection of the three varieties in this blend. Grenache provides darker, savoury, earthy characters. Shiraz typical red berry and plum, and the Mourvèdre spice and black pepper. PALATE = The palate demonstrates all of the hallmarks of this world famous blend. Soft and unctuous with a juicy mouthfeel, the wine is full bodied and packed with flavours of red berry and spice. Fine tannins lead to a dry and long finish perfect for food. WINEMAKING = Crushed to Open fermenters with Plunging 3 times daily, fermented for 7 days on skins then pressed directly to 10% new French oak and the balance 2-4 year old French oak to complete primary ferment. All parcels of Grenache, Shiraz and Mourvedre were kept separate until final blending after 10 months of maturation. VINEYARDS = Selected from three parcels of Grenache, five parcels of Shiraz and one parcel of Mourvèdre all from different micro climates in McLaren Vale. The first two Grenache parcels comes from an early ripening Aldinga site giving brooding dark fruit with strong structural tannins. The second Grenache is from near Willunga which produces more red fruit and finer tannins. The Shiraz parcels vary from selected sites near Sellicks, Whites Valley, Seaview, McLaren Flat and Blewitt Springs each offering different levels of spice, dark fruit and structural tannins. The Mourvedre was selected from our own vineyard near McLaren Flat and shows spicy lift and structural tannins. THE SWITCH STORY = The Switch story revolves around the Hazel Tree. Twigs from the Hazel tree have been long thought to provide protection from evil as well as being used for water divination. A switch is a bundle of twigs signifying the collaboration of these three varietals into one. PALATE = Elegantly weighted yet full flavoured, the palate is soft and savoury with flavours of red fruits, mint and subtle spice. The wine echoes the origins of the variety, the Rhone Valley. WINEMAKING = Destemmed but not crushed to open fermenters, cold soaked for 3 days under inert gas cover, then fermented at 22-28 degrees and plunged 3 times a day with a gentle pump over during peak ferment. On skins for 8 days before pressing to 1 and 2 year old French oak Hogsheads. The batch is kept separate through maturation and after 18 months, barrels are individually selected to showcase the very best this block has to offer. VINEYARDS = Selected from Haselgrove s own vineyards in McLaren Flat from block F04 planted in 1972. Soil is deep sand to sandy loam over clay. Very gentle north westerly aspect with East West row orientation allows more delicate characteristics to develop. Characteristics common to the sub region include blueberry fruit, some red fruit, plums and a subtle violet lift with elegant tannins.
