Cake Recipes Texas Sheet Cake Oven Temp: 375 degrees 28 nice size pieces per cake 2 sticks butter 1 cup water melt in pan blend Frosting: ¼ cup cocoa powder 1 stick butter melted ¼ cup cocoa powder 2 cup flour 6 tbs. milk 2 cup sugar 1 lb box powder sugar 1 tsp. baking soda ( 3 ¾ cups per lb.) ½ tsp. salt 1 tsp. vanilla 2 eggs whip until smooth with whisk 1 cup sour cream Let butter mixture cool slightly, add sour cream and beaten eggs and combine. Add dry ingredients and pour into Jelly Roll pan. Bake for 15 20 minutes. Watch carefully, do not over-bake. Let cool and then frost with warm frosting. Let frosting cool and set before serving. Cut 4 lines across short direction and 7 lines in long, makes 28 pieces **I make 3 bags of Brownie Mix in a half sheet pan & top w/ 1 ½ x the sheet cake frosting mix. Quick, easy, and great for group brownie Sunday desserts. Chocolate Carmel Cake 2 Devil s Food Choc. Cake mixes (Duncan Heinz is the Best) 1 jar Butterscotch Caramel Ice Cream topping (Mrs. Richardsons) 2 small containers Cool Whip or 1 XL size 5 Score Candy Bars Bake cake in half sheet cake pan (12 x 18 x 2 ) 26 minutes and start checking do not overbake cool. Poke holes in top of cake with large straw and drizzle caramel into holes. Spread cool whip on top of cake. Use sharp Butcher knife, line up 2 Score bars, use firm pressure on top of knife and cut into small pieces one direction and then the other. Sprinkle on top of the cool whip. Store covered in fridge. Tip for poking holes with straw: use paper plate to place cake worms on, poke 4 holes and then blow lightly on end to clear straw. Repeat throughout cake. If you poke too many times, it is too hard to blow out.
Summers Best Strawberry Cake Topping: (2) 8 oz. Pkg. Cr. Cheese softened 4 cup powdered sugar cream until smooth 1 regular size Cool Whip fold into topping ingredients above Spread evenly over cooled cake and let chill (add strawberry layer as close to serving as possible) 2 boxes Strawberry Junket Glaze Mix (in CA can get at Stater Brothers) Prepare per box and let cool a little bit don t let set up too much Slice Fresh Strawberries toss w/ glaze and top cake but not too soon before serving so strawberries look fresh: I cut in halves and put cut side down- looks best Grasshopper Fudge Cake 2 boxes Betty Crocker (Super Moist) white cake mix 2 ½ cups water 2/3 cup vegetable oil 4 tsp. mint extract 6 egg whites 24 drops green food coloring 2 jars (16 oz. each) hot fudge topping (alternate: 2 boxes instant choc. Pudding per pkg. instructions minus ½ cup less milk) 2 containers (8 oz.) frozen whipped topping, thawed 8 drops yellow food color Andes Crème de Menthe chocolate candies, unwrapped and cut into pieces 1. Bake in ½ sheet cake pan (12 x18 x 2 ) spray pan with Baking Pam 2. Make cake mix as directed on box, using water, oil, 3 tsp. of the mint extract and the egg whites. Reserve 1 cup. Batter. Stir 6 drops of the green food color into reserved batter; set aside. Pour remaining batter into pan. 3. Drop green batter by generous tablespoonfuls randomly in about 24 mounds onto batter in pan. Cut through batters with metal spatula or knife in S-shaped curves in one continuous motion. Turn pan ¼ turn: repeat cutting for swirled design. 4. Bake 22 min. and start checking do not over-bake cool completely 5. Carefully spread fudge topping evenly over cake. In medium bowl, stir cool whip 1 tsp mint extract, 18 drops green food coloring and the yellow food coloring until

Banana Cake (2) 5 oz boxes banana instant pudding prepare per box with ½ cup less milk chill in frig while cake is baking and cooling when cake is cool spread evenly on top of cake 5 large bananas (just ripe, not over ripe) slice and cover top of pudding layer 2 regular size Cool Whip or 1 XL Cool Whip spread over banana and pudding layer ½ to ¾ cup chocolate chips put on paper plate and chop up with large butcher knife into even small pieces sprinkle over top of cake Chill in frig until serving of half sheet cake pan. Orange Dream Cake 2 boxes Duncan Heinz Devils Food cake mix- spray pan with Pam Baking Spray Prepare and bake in ½ sheet cake pan (12 x 18 x 2 ) Bake 26 min. and start checking do not over-bake..cool (2) 15 oz cans dole mandarin oranges (1) 8 oz brick cream cheese (1) 16 oz XL Cool Whip 1 cup sugar 2 eggs well beaten 2 ½ Tb Cornstarch 1 to 2 Tb Orange Zest 2 full size Hershey bars chopped into small chunks Make cake per box cook 25 minutes and start checking do not overbake----cool While cake is baking: Drain oranges reserve liquid Put cream cheese out to soften In a sauce pan: mix mandarin juice and water to make 2 cups, add sugar and corn starch. Cook on med-high heat until thick and bubbly---cool This is a custard After cool add custard to cream cheese and beat until fluffy. Chill until cold add orange zest Fold Cool Whip into custard mixture and frost top of cake. Top with chocolate pieces and keep in frig until serve. Mandarin Cake 1 box Duncan Heinz Butter Cake Beat Together ½ cup oil 1 15 ox can mandarin oranges drained 4 eggs Divide into (3) 9 inch rounds: grease and flour pan Bake 18 to 22 minutes- watch carefully and do not overbake 350 degrees Frosting: 1 XL cool whip 1 large can crushed pineapple w/ juice 1 large instant vanilla pudding Put pineapple in bowl, mix by hand with pudding, Fold in Cool Whip Frost all 3 layers. Make several cakes, can decorate with a few flowers on top and display on cake stands on layered boxes covered with colorful tablecloths or material. Orange Delight Cake (2) 15 oz. cans mandarin oranges drain and reserve liquid Custard: 1 c sugar 2 egg well beaten 2 Tb cornstarch Mandarin Juice + water to make 2 cups Cook until thick and bubbly set aside and cool 2 boxes instant vanilla pudding make per directions and cool until set Add custard and 2 Tb orange zest and mix thoroughly Top cake with custard/pudding. Place oranges on top evenly and sprinkle with mini marshmallows Top with cool whip and sprinkle with orange sugar crystals (kind for cookie decorating) Lemon Cake 1 package lemon cake mix 1 small package lemon jello ¾ cup vegetable oil 4 eggs 2 cups powdered sugar 2 lemons, juiced Mix all of the above ingredients, except fore the powdered sugar and lemon juice. Pour into a greased and floured 9 x 13 pan. Bake 25 to 30 minutes, (check it ovens vary) Let stand after removing from oven for a few minutes. Then using a toothpick, poke the top full of holes. Mix powdered sugar and lemon juice to make a glaze. Pour over warm cake. Refrigerate for several hours. Serve with a dollop of Cool Whip This recipe can be doubled and placed in a ½ sheet cake pan. Easy Fudge Brownies 3 to 4 pouches of bulk brownie mix from Sams or Costco Prepare as directed on box Prepare double batch of the frosting on the Texas Sheet Cake recipe and frost top of brownies. This is great for a quick fill in for Fireside Deserts Serve with scoop of Vanilla Ice Cream
