Maison Castel Merlot This Merlot is designated a Pays d Oc Protected Geographical Indication wine. The particular character of this wine is derived from its region of origin, the Languedoc, whose climate is predominantly Mediterranean with very hot, dry summers and mild autumns, winters and springs. Selection is a key stage in the production process, providing us with grapes from which we can draw out jammy, as well as crisp, pungent fruity aromas. Made from a blend of wines produced by a traditional fermentation and a thermo-vinification. We are seeking to achieve a balance between fruit and structure, which will bring out the finest expression of the grape variety. Dense, dark ruby. Aromas of red fruit, cherry and wild strawberry along with spicy notes. Lovely balance with beautiful structure and a delicious, long-lingering finish. Serve between 10-12 C. Best enjoyed within 1-3 years. 12.5% Alcohol content. Barbecues, charcuterie, and soft cheeses. Bavette (flank steak) with shallots. 1

Maison Castel AOC Côtes du Rhône Grenache-Syrah The Côte du Rhône AOC sits on both sides of the River Rhône between Vienne, Valence and Avignon. The appellation derives its personality from a surprising diversity of soils and climates. This great diversity has led to several grape varieties, including the Grenache and the Syrah, being grown here. The Grenache red grape variety endows the wine with fruit, warmth and smoothness, while the Syrah confers spicy aromas, colour and a firmer structure. Long, 4-5 week maceration in order to extract the finest expression from the grape varieties. Slow, traditional vinification to retain the character of the terroir and the grape variety. Blending is carried out with precision applying the typically French expertise with Côtes du Rhône wines. Intense garnet with purplish tints. Aromas of wild strawberries, violets and yellow fruit. Very smooth, with lovely structure and a supple finish. Serve between 16-18 C. Best enjoyed within 2-3 years. 14% Alcohol content. Red meats, game, and cheeses. A venison roast. 3
Château Cavalier Côtes de Provence Cuvée Marafiance This rose wine originates from france. High quality mechanical harvests, carried out overnight to avoid risk of oxidation. Syrah, Rolle, Semillon and Cabernet Sauvignon cold-soaked on musts for 15 to 18 days. Pellicular maceration for Grenaches ( 4 8 hours). Fermentation at controlled temperatures, between 14 and 18 C depending on varietal. Aged on gross lees with batonnage for 2 months, then on fine lees for 1 2 months. Pale pink with a glimmer of blue. Very complex. First nose shows notes of citrus and red fruit; second nose develops floral, spicy aromas. Plenty of finesse. Elegant palate, lots of finesse. Flavours of red fruit and citrus, developing floral and mineral notes. Aromatic and complex on the finish with good tautness. Serve between 10 and 12 C. Best enjoyed within 1-2 years. 12% Alcohol content Baked asparagus, hummus, savoury parmesan mousse, baked turbot, fresh and cooked fennel, grilled langoustines with citrus butter, baked fillet of John Dory, rack of veal en croute. 4
Château d Arcins Haut-Médoc This red wine originates from france. Mechanical harvests with on-board sorting. The Médoc s first circular winery. All tanks are temperature controlled. Cold maceration for 2 4 days before fermentation. Alcoholic fermentation at 25 C. Each wine is tasted 3 times a week to optimise the pumping over process and obtain the desired quality of tannins. 30 days maceration in tanks at 26 C. Bâtonnage until malolactic fermentation is over to add volume. Ageing in medium-toast French oak barrels for 12 months to add body and volume. 20% of barrels are new. A very deep, purple colour the sign of a good, dense nose. The nose develops appealing notes of very ripe fruit and precious wood. A rich, vinous palate with sophisticated tannins and a tight structure, lifted by notes of eucalyptus, adding freshness and complexity. Another excellent wine! Best served at 17 C. Allow to breathe for 2 hours before serving. Best enjoyed within 5-12 years. 13% Alcohol content Home-made terrines, slow-cooked lamb, duck, good cuts of beef, game, traditional cuisine, mature cheeses. 5
Château Barreyres Haut-Médoc This red wine originates from france. Traditional winemaking methods were adapted to suit the vintage; Merlots and Cabernets were fermented at low temperatures. No pre-ferment maceration. Controlled use of inputs. Fairly short maceration - 12 15 days. Aged for 12 months without new wood; effective protection from oxygen. Very little racking as the wine matured. A very pleasing deep crimson colour. Full of deliciously fruity aromas including blackcurrants and forest fruits. This Cru Bourgeois is known for its charming, elegant character. The palate is pleasingly well-structured, and flavours include cooked fruit and strawberry compote. Very well balanced: powerful yet highly elegant. One of 2013 s success stories. Best served at 17 C. Allow to breathe for 1 hour before serving. Best enjoyed within 3-6 years. 12.5% Alcohol content Good cuts of beef, gigot of lamb, free-range chicken, dishes served in sauce and mature cheeses. 6
Château Ferrande Graves This red wine originates from france. Harvesting progressed without complications For Merlots, vinification focused on fruitiness, using reductive techniques. Structure was the focus for Cabernet Sauvignons. Standard vinification temperatures, between 28 and 30 C. Merlots vatted for a moderate length of time; Cabernets a little longer. Aged in French oak barrels, 30% new. Château Ferrande 2014 shows a deep, beautifully intense colour almost black. Red fruit on the nose with a smattering of warm, toasty notes and a hint of vanilla. A smooth attack followed by a beautifully full body with powerful, elegant tannins. Very harmonious on the palate, leading to a good, long finish. Best served at 17 C. Allow to breathe for 1½ hours before serving. Best enjoyed within 5-10 years. 13% Alcohol content Home made terrines, free-range chicken, beef bourgignon, roast veal with wild mushrooms, good cuts of beef and mature cheeses. 7
