Blizzard Preparation Tips Wash hands frequently to prevent cross-contamination. Set Blizzard machine speed control to 100. Position spindle approximately 1 (2.5 cm) from the bottom of the cup. Blend for approximately 10 seconds. The ingredients should be well mixed throughout the soft serve. Serve all Blizzard Treats upside down with a long red spoon. Clean the Blizzard machine after making each Blizzard to prevent cross contamination. If using disposable collars, discard after making Blizzard. Do not reuse. Cut about 1-1/2 from the hose ends and reconnect the clamps Check for any leaks at the connections to the freezer, at the faceplate o-ring, or for cracks in the faceplate Make sure that the quad ring is positioned properly (219 pump) Make sure that the air outlet is pumping air (U3 pump) As a last resort, adjust overrun setting The proper overrun for DQ soft serve is 40% and has the following characteristics: Smooth and Creamy Appearance Full, Firm Shape Dry Sheen High Overrun Characteristics of high overrun: (too much air) Fluffy Appearance Marshmallow Texture Pockmarks on Surface No Vanilla Flavor Taste Feels Light (validate with scale) Make sure that the mix bag is not empty Make sure that all hose connections are clamped tightly Make sure that the bag adapter is firmly in bag fitting Check for pinholes in mix bag and hoses Verify that the check valve in the bag adapter is in place and not damaged Be certain that the DQ mix stays in the hose from the bag to the pump when the pump is not operating Make sure that the air inlet check valve and air inlet retainer are positioned correctly (219 pump) As a last resort, adjust overrun setting 1. Fill the Mini Blizzard cup. Make sure there aren t any air pockets. 2. Scrape the top of the cup with a straight edge. 3. Weigh the filled cup.
