Recipe Name: Grilled Ham Steak Kabobs with Peach Slaw Preparation time: 15 minutes Cooking time: 10 minutes 1 Cook s brand Bone-In Thick Cut Ham Steak Wooden (soaked in water) or metal skewers 1 1/2 teaspoons Moroccan Spice* 1 tablespoon olive oil *Moroccan Spice: 3 teaspoons Ground Cinnamon 2 teaspoon Ground Cumin 1 teaspoon Ground Ginger 1 teaspoon Turmeric PEACH SLAW: 2tablespoons red bell pepper, diced 4 peaches, sliced 3-ounces snow peas, julienne 1tablespoon mint, chopped 1tablespoon rice wine vinegar 2 teaspoon whole grain mustard 2 teaspoon sugar Pinch of cayenne pepper 1 tablespoon olive oil Salt and pepper, to taste Prepare charcoal or gas grill. Cut ham steak in 1 by 3-inch strips and place on water soaked wooden skewers. Sprinkle on Moroccan spice and olive oil. Place skewers on grill over medium heat until golden brown. Combine remaining ingredients and mix well. Set aside. Scoop peach slaw on a plate and lay kabobs on top. However, you will find that bone-in ham and boneless ham vary in flavor, texture and preparation. Bone-in ham has a superior taste and texture because the natural muscle, fat and bones are undisturbed. Bone-in hame is easy to prepare and serve. Recipe Name: Ham Steak Kabobs with Vegetable Medley Preparation time: 20 minutes Cooking time: 10 minutes 1 Cook's brand Bone-in Ham Steak, cut in 1-inch cubes 1 red pepper, cut into 1-inch chunks 1 green pepper, cut into 1-inch chunks Cherry tomatoes Mushroom caps 1 1/2 cups pineapple chunks, fresh or canned 1 medium onion, chopped into 1/2-inch pieces 8 wooden (soaked in water) or metal skewers Preheat grill. Skewer the ham, alternating with remaining ingredients. Heat on grill for approximately 3 to 4 minutes per side or until golden brown. Serve hot. Yield: 2 cups 1 jar (12 ounces) cherry preserves 1/4 teaspoon ground cinnamon 1/4 cup honey 1/4 teaspoon ground cloves 1/4 cup red wine vinegar 1/4 teaspoon salt 1/4 teaspoon ground nutmeg Combine all ingredients. Iridescence on the meat's surface is usually a result of curing agents reacting with air and light and has no effect on quality. Most hams are labeled "fully cooked." They have been cooked during processing and are ready to eat with or without further heating. Some hams are labeled "cook before eating." Before serving, these hams need to be cooked to an internal temperature of 160 degrees F. Storing: A ham slice can be stored in the coldest part of the refrigerator for up to 4 days. Marinate at least 30 minutes. Spray grill with non-stick vegetable spray and grill or broil vegetables 4-5 minutes.turn vegetables, add ham steak and grill another 3-5 minutes, turning steak once, until ham is heated through. Remove from grill, slice ham steak and peppers into 1/2-inch thick strips. Serve with warm tortillas. Fajitas may be garnished with salsa, shredded lettuce, chopped tomatoes, sour cream and guacamole. Recipe Name: Marinated Ham Steaks Yield: 6 servings Preparation time: 1 hour Cooking time: 10 minutes 2 Cook's brand Bone-in Ham Steaks Fresh rosemary sprigs to garnish MARINADE: 2 teaspoons soy sauce 6 whole cloves 1tablespoon sherry vinegar 1 (1-inch) piece cinnamon stick 2tablespoons peanut oil 1/2 teaspoon black pepper 1tablespoon honey 1(8 oz) cooking apple, peeled & grated 1tablespoon chopped fresh rosemary Prepare marinade: combine all ingredients except ham & rosemary in bowl, mix well. Pour marinade over ham steaks in dish, turning to coat evenly. Cover and refrigerate 1 hour. Prepare charcoal or gas grill. Place ham steaks on grill over medium heat. Grill ham steaks 3 to 5 minutes per side, turning once and brushing with extra marinade. Garnish with rosemary sprigs.

Recipe Name: Sweet & Sour Ham Steak Yield: 6 servings Preparation time: 15 minutes Cooking time: 10 minutes 2 Cook's brand Bone-in Ham Steaks 1/2 cup brown sugar, firmly packed 1/3 cup beer or apple juice 2 tablespoons Dijon mustard 1 teaspoon pumpkin pie spice Prepare charcoal or gas grill. In a small saucepan, combine brown sugar, beer or apple juice, Dijon mustard and pumpkin pie spice. Heat glaze over medium-high heat, stirring several times, until it starts to bubble. Remove from heat. Grill each ham steak 1-2 minutes each side before applying glaze. Baste ham steaks with glaze, grill 2 minutes, turn and baste again; grill an addition 2 minutes. Serve hot. Ham Tips Before you head to the store to pick up a ham, here's a rundown of the types you're likely to see. Bone-In:A traditional pear-shaped ham that has at least part of the shank bone present. Bone-in hams are sometimes sold whole, but they more commonly are available cut into halves or rump or shank portions, and as center-cut slices (sometimes called ham steaks.) Whole hams weigh between 10 and 18 pounds. Semi-Boneless:A ham with the shank and hipbone removed, leaving only the round leg bone. Boneless: A ham without the bone, with outside skin and fat removed that is shaped by placing it into a casing or a can before processing. The most popular kind of ham is a fully cooked ham. It is ready to eat when you buy it.to serve the ham hot, heat it to 140 degrees F. Hams labeled cook before eating are not completely cooked during processing and should be cooked to 160 degrees F. If you're unsure whether a ham you've bought is fully cooked, cook it to 160 degrees F. Country or country-style hams are distinctively flavored and specially processed.they are cured, may or may not be smoked, and usually are aged. Country hams generally are saltier than other hams and often are named for the city where they are processed. Follow package directions for these hams. Set aside. Prepare charcoal or gas grill. Place ham steaks on grill over medium heat. Grill 3 minutes.turn ham steak; brush with peach chipotle glaze and continue to grill 3 minutes.turn again; brush with remaining glaze, continue to grill 1 to 2 minutes or until ham is glazed and heated through. Combine ingredients for the peach fresca in a bowl and mix well, set aside. Place ham steaks on grill over medium heat. Heat according to package instructions. Recipe Name: Zesty Potato-Ham Casserole Yield: 8 servings Preparation time: 20 minutes Cooking time: 35 minutes 2 1/2 cups Cook's brand Bone-In Ham Steak, cut into 1/2-inch cubes 8to10medium potatoes, peeled, chopped* 1/2 medium onion, chopped 1 medium green pepper, seeds removed, chopped 1 1/2 teaspoon pepper 8-ounces sharp cheddar cheese, grated 1 medium tomato, seeds removed, chopped Preheat grill (medium setting)**. Make foil packet by placing potatoes, onions and green peppers on the center of foil sheet. Sprinkle pepper over entire mixture and stir to mix well. Bring up foil sides and double fold top and sides to seal, leaving room for heat circulation inside. Place on grill for 20 minutes or until potatoes are tender. Remove from grill; add cubed ham, stirring slightly to mix. Reseal and return to grill for approximately 10 minutes. Remove from grill and sprinkle cheese & tomatoes over entire mixture. Return to grill, leaving the packet unsealed, but the grill lid closed, and cook for approximately 5 minutes or until cheese is melted. Remove from grill and serve. *Depending on the cut of your potatoes, you may need to adjust the cooking times. **If you prefer to cook this dish in the oven, simply place foil packet on a cookie sheet in a preheated oven at 375 degrees. Bake for 60 minutes, or until potatoes are tender, and follow rest of instructions.
