LIMITED EDITION Christmas T RIO Box During the holidays, Kaviari makes you travel around the world with a new Christmas Trio Box including three caviars with diverse origins. From Russia, reminding the Splendor of the Tsars banquets, to the Amour River in China where the sturgeons are spreading, and through the Apennines Mountains in Italy, live a rare gustatory experience. Kaviari s famous tins each contain 10gr of caviar originated from three different varieties of sturgeon, for an extraordinary trip across shades of colors, shapes, and tastes of caviar grains. CAVIAR TRANSMONTANUS (WHITE STURGEON) The Acipencer Transmontanus is a sturgeon migrating between the great rivers of the US West coast and the Pacific Ocean (Bay of San Francisco or Vancouver). It is the sturgeon that is the most often raised in Californian aquacultural farms; but it can also be found in Europe, mainly in Italy. The Transmontanus caviar and its dark grey grains is known for its light iodine flavor and its notes of fresh nuts. CAVIAR OSCIETRE PRESTIGE (RUSSIAN STURGEON) The Acipenser Gueldenstaedtii is a mediumsized sturgeon, with an average weight between 80 and 200 kg. It has a sort and massive head and a retractile trunk under its slightly sharp nose, with which it can suck plants, small fishes and sellfishes. It is an anadromous fish that gives the most diversified eggs. The color of the Caviar Oscietre varies from dark brown to golden, and its very delicate taste makes it one of the finest caviars. The Oscietre Caviar, whose color goes from dark brown to golden, has subtle and complex flavors, maritime and nutty at the same time. CAVIAR KRISTAL (AMOUR STURGEON) The Acipenser Schrenki is a wild sturgeon living on the Amour River in China. Its size can reach up to 2 meters and it can weight up to 200 kg. A story says that in 1993 a 5.20 meters long sturgeon from the Amour River was caught in China. Its size was compared to a minibus! The caviar Kristal and its golden grains with grey reflects is the great chefs favorite. Its fine, subtle, and tasty almond flavors create an amazing taste. The sturgeon family is very diversified as at least 24 different species are already listed, living in either fresh or salted water. The sturgeons spread mostly in the Northern Hemisphere: Black Sea, Caspian Sea, Atlantique Basin, Pacific Basin, Mediterranean Basin, Aral Sea, Caspian Sea, and in North America. Today, only 9 species have been selected for their capacity to adapt in fresh water. Those sturgeons are farmed in basins or lakes all around the globe, from Gironde to Danube, Volga to Amour, and Delaware to Mississipi. Every year, Kaviari travels around the continents to select the fish farms that respect a charter of eco-friendly farming, that ensure the continued existence of ancestral know-how while producing very high quality caviars. CHRISTMAS SELECTION The Huso Dauricus caviar For Christmas, Kaviari delights the amateurs by unveiling the savors of a rare caviar: the Huso Duaricus, also known as Kaluga. This great sturgeon lived in the Amour River in China. Wild, it could reach the age of a 100 years, and weight up to 1000 kg. The Kaluga caviar (Huso Dauricus) is the cousin of the Beluga (Huso Huso) and belongs to the same species of sturgeon Huso. This relatedness explains their resemblance in terms of size of grains, color and delicate taste. Very similar to wild caviar, the Kaluga caviar is much sought-after by the connoisseurs. The female reaches maturity between 15 and 20 years old. The Huso Dauricus caviar distinguishes itself by the golden color of its eggs. Its unctuous and bright grains reveal iodine and buttery savors, with a sumptuous almond touch. The Christmas Selection will be available starting in November. CHRISTMAS CAVIAR BOX A box with surprises centered around a recipe of Arnaud Donckele For Christmas, the Caviar Box will be magic! Arnaud Donckele, the 3-stars chef of the Vague D Or in Saint-Tropez will prepare an exclusive recipe with caviar. All the ingredients of the recipe will be in the Box to realize the Chef s festive meal. Decorative objects for the table and other surprises will be randomly selected and added to the Caviar Box so that the surprise will be more than ever a fabulous/special moment.
