Introduction Espresso coffee is the base ingredient for all of our famous coffee recipes. As a new Buona Fortuna barista (expert in the art of making espresso), you should know how to use the recipes below to brew a smooth, delicious shot of espresso. Espresso has a thick, golden layer of froth on the top called crema and is best served hot. Espresso is served plain, or garnished with a slice of lemon rind as desired. Although espresso does not need cream, you will need to learn how to steam and foam milk to make cappuccino, Caffe latte, or Caffe mocha. {Before making espresso, please read the enclosed Espresso Machine instructions - p. 5.) Espresso Basic Recipe (Ingredients Needed) Water 7 grams of finely ground coffee, any flavor 1 coffee tamper, used to pack down coffee in porta-filter 1 shot (1 oz.) glass or demitasse cup Espresso Maker Operating Instructions Turn the power switch to ON position. Wait for the temperature gauge to read HOT. Place the ground coffee into the porta-filter. Pack coffee down with the coffee tamper. Insert the porta-filter into the filter assembly & turn clockwise until you hear it click. Warning! (If you don t hear the filter click, it is not locked) - Remove filter, try again. Place the shot glass or espresso cup beneath filter. Push the BREW switch. The espresso will drip through the filter in about 18-23 seconds. Espresso tastes best if it is served immediately. Foam Based Drinks (Ingredients Needed) 1 shot of espresso in a 16 oz. coffee cup or mug 1 &1/4 cp. of skim or whole milk in a small pitcher 1 large spoon to control the amount of foam or milk that is poured into the cup. Foam Instructions Turn the steam valve to the open position. Insert the tip of the steam wand into the milk pitcher until it touches the top surface of the milk. Lower the pitcher as amount of foam increases. Next, turn the steam valve to the closed position. Wait one minute for foam to separate from milk. Tip the pitcher & use spoon to control amount of foam. Discard unused milk and foam. 3
Additional Espresso-Based Recipes Cappuccino 1 shot of espresso ½ cp. Steamed milk ½ cp. Foam (on top) Caffe Latte 1 shot of espresso ¾ cps. Steamed milk ¼ cp. Foam (on top) Caffe Mocha 1 shot of espresso 2 Tbsp. Chocolate Syrup ¾ cp. Steamed milk, no foam 4

Espresso is a rich, full bodied hot beverage that is brewed by passing very hot water (190 degrees F) under high mechanical pressure (132 psi) through finely ground, high-quality coffee. This manual will provide descriptions of each part, along with an easy to understand step-by-step instruction guide that will quickly allow you to learn the proper operation of the machine. Display Window Select desired recipe. 2. Water Inlet Add measured water. 3. Porta Filter Put coffee in filter. Rotate filter to lock. Place cup directly under filter. 4. Drip Tray Overflow drip tray. 5. Power Switch Switch on the unit. 6. Brew Switch - Switch on the pump. 7. Water Level Gauge Check water level. 8. Temperature Gauge Monitor gauge to ensure temperature of 190 F. 9. Steam Wand Insert wand into cold container of milk to create foam. 10. Steam Valve Adjust valve to steam cold milk to desired level of foam. Description of Machine Parts Display Window A window that shows available recipes for Buona Fortuna espresso machine Water Inlet The spout where the correct amount of water is poured for desired recipe Porta Filter The filter where coffee is added & where cup is placed beneath filter nozzle Drip Tray A run-off tray for excess coffee drippings Power Switch The On/Off switch for heating elements (not shown) Brew Switch The On/Off switch for the pump to generate pressure & heat into filter Water Gauge Level A level that allows one to check the boiler for correct amount of water Temperature Gauge A gauge that monitors machine temperature to achieve 190 F Steam Wand The wand that is used to turn cold milk into foam Steam Valve The valve that is used to adjust the level of foam 5
Troubleshooting the Buona Fortuna Espresso Machine During the operation of any machine, parts can malfunction, become damaged or break, even if all instructions are followed carefully. If that occurs while the Buona Fortuna espresso machine is being used, turn off and unplug the espresso maker immediately, using care to protect yourself from steam damage that could occur. Call Buona Fortuna Technical Support Team @ 800-555-5555. Repair technicians are on-call 24 hours per day/7 days per week/365 days per year and will be dispatched to your store immediately to repair or replace the equipment. 6
