Driven by his passion for perfection Maurice Lustenberger first started making cheese in 1862. To craft the best cheese, Maurice used only the best milk coming from cows grazing exclusively on fresh alpine herbs and hay. From 1862 to today, we continue the tradition of using only this rich and creamy milk to make the original Lustenberger 1862. To make Lustenberger 1862, we craft by hand in our local dairy, using a recipe that has been handed down through the generations. Once the cheese has been formed, we move it to our family s cellars and age it for 180 days under the loving care of our maîtres affineurs.
