ALCOHOLIC BEVERAGES HOST BARS - Beer, Wine, Soda or Full Service Bars Host bars are billed to the Sponsor of the event based on guest consumption per beverage. A Host Bar set up fee of $40.00 per bar and Bartender Labor at $18.00 per hour apply. One hour minimum bartender labor and half hour set up and break down will be added. Per Person Host Bars are available; labor and set up fees do apply. Beer, Wine and Soda - $8.00 for One Hour, $12.00 Two Hours, $3.00 Additional Hours. Full Bar - $9.75 for One Hour, $14.00 Two Hours, $4.00 for Additional Hours. CASH BARS - Beer, Wine, Soda or Full Service Bars Individual guests pay for beverages with cash at the time of the event, based on consumption. Cash bar set up fee of $50.00 as well as Bartender labor of $18.00 per hour will apply. One hour minimum bartender labor and a half hour set up and a half hour break down time will be added. ALCOHOL PROCEDURE AND POLICY It is the policy of Marquette University that no alcoholic beverages are brought on the premises for consumption. All beverages provided during bar services are to remain within the facility. Alcoholic beverages not consumed will remain the property of Marquette University and Sodexo, in accordance with the laws of the State of Wisconsin. We recommend at least one bartender for every 50-75 guest for full service bars and 75-100 for beer and wine service. PLANNING YOUR SPECIAL EVENT We pride ourselves in being able to meet everyone s catering needs. The following steps will help you through the process of organizing your special function. Arranging and Reserving a Date All requests for catering and space is coordinated through the University s Event Management Office. Our Event Coordinators are here to assist you in planning a special and memorable occasion. The Event Management Office is located on the 2nd Floor of the Alumni Memorial Union, Room 245. Campus Facilities Select campus facilities, such as inside academic classrooms may not be condusive to catered events. Please discuss with your Event Coordinator to confirm the specific location for your catering needs. Booking/Planning an Event Please contact the Event Management Office at least fourteen (14) business days prior to your event at (414)288-7202 or through our website: http://www.marquette.edu/eventmanagement/plan-event.shtml or stop by our office located in the Alumni Memorial Union, Room 245. Our Catering Team welcomes the opportunity to provide custom menus to incorporate themes, cultural influences, special requests and a variety of culinary and event styles as well. Please contact your Event Coodinator to schedule a consultation. Event Confirmation and Guarantees Upon your expressed interest and confirmation of space and catering, you will recieve an event order confirmation for your review. Please acknowledge each confirmation via phone or e-mail. Please confirm all catering services; to include final guest count, food quantities and event timeline three (3) business days prior to the event date. Payment All event functions must be secured by payment before they occur. We accept Credit Cards, Check and University Budget Account numbers. The AMU and facilites policy requires 75% deposit for catering services, equipment, labor, facilities and services within ten (10) business days of the receipt of the Event Order Confirmation. Please note - the estimated total cost of the event will be due seven (7) days prior to the date of your event. A final invoice will be sent following the event with remaining associated costs. Non-University groups are subject to 18% fee and Wisconsin sales tax for all food events. Tax exempt organizations are required to submit a copy of their exemption certificate prior to their event. Changing/Cancelling an Event All cancellations and final changes must take place at least three (3) business days before your function. If you do not provide a final count within three (3) business days allowed, we will prepare for the estimated number and charge accordingly. If a cancellation is made to your event within three (3) business days, charges may be incurred due to food preparation or equipment rental. We are excited to assist with the planning of your event! Delivery Fees We are happy to provide complimentary delivery and set up for the Marquette University Campus. Catered events requesting china service for select locations are subject to a $1.00 per guest, per service charge. Off campus service will incur fees. Attendants Upon request or required for select events an attendant may be on site. When charges are incurred by the event sponsor a $15.00 amount per hour, per attendant, will be reflected on your event order confirmation. Continental breakfasts, breaks, and receptions are priced for self-service. Buffet style functions are staffed with one attendant for every 25 guests and are included with the per guest price. Prices for served meals include service staff. The charge for each staff member is: Attendants $15.00 Price per hour (minimum 1 hour) Station Chefs $28.00 Price per hour (minimum 2 hours) Bartenders $18.00 Price per hour (minimum 1 hour) Catering Equipment As the host of the catered event, you are responsible for the equipment we have provided for the service of your catered event. Any missing or damaged catering equipment or supplies will be charged to your account at replacement cost. Charges will be incurred for equipment rented from an outside source. Please allow for 4-6 weeks notice for specialty items. China Charges We provide china service for all catering services within the Alumni Memorial Union. Catering events outside of the AMU are provided high quality, eco friendly plastic ware. Fees below are for outside of the AMU. For decorative requests an additional fee will be determined in accordance with your specific needs. Linens We will provide linens for buffet tables at no charge. If you would like linen on guest tables for receptions, breaks, meeting tables and boxed lunches, there will be a fee per table linen. Specialty linens are available upon request for an additonal charge. Food Removal Policy Due to health regulations, it is the policy of Marquette University and Sodexo that excess food items from events cannot be removed from the event site. Items purchased for pick up should be properly stored prior to the event and removed and disposed of by the host of the event. Service Time Guidelines The Catering Guide Menu items are designed for services of up to 2 1/2 hours. Please consult with your event coordinator to request extending these service times. Alcohol Service/Policy It is the policy of Marquette University and Sodexo that alcohol cannot be brought on the premise. All alcoholic beverages must be served by our personnel and consumed in the event area. Our services and policies are on page 37 of this guide. We can also accomadate specialty drink requests and services to fit your event! Please do not hesitate to inquire with your coordinator.
