Pittormie Kitchen Philosophy At Pittormie Castle our philosophy on food is simple. We only source the finest ingredients and through skill, knowledge and understanding elevate the flavours to create the most memorable dishes & dining experiences. All of our suppliers are personally inspected by our chefs and have to meet our strict criteria and high standards. Through this we have complete traceability from source to plate. We not only know what sector our fish comes from but we also know the name of the boat and even the name of the skipper. It is certainly apparent as soon as you have your first taste at Pittormie that Scotland is the home to the finest natural produce the world has to offer. From our Buccleuch beef that is completely grass-fed and dry aged for a minimum of 35 days to our hand selected Cumbrae oysters that are delivered to us daily and opened to order, every ingredient has a personal story & plays a part in the Pittormie dining adventure. In a career working in some of Scotland s highest regarded kitchens and winning multiple awards Chef Russell Robertson started at Pittormie Castle in 2011. Taking over as executive head chef in 2015 Russell s vision was to build a hardworking and passionate kitchen team that is continuously progressing and striving to improve the dining experience at the castle. Now with a full team of highly ambitious local chefs the food is well researched, highly skilled and amongst the very best in Scotland. Using only the finest hand selected ingredients from our own private garden to the Hebridean islands the Pittormie Kitchen create some exquisite dishes and dining experiences that will make your stay truly memorable.
1596 Restaurant In the Morning Enjoy the calm and bright surroundings of the castles main dining area 1596 for breakfast from 6.30am each morning. Select your starter from the Buffets array of homemade granolas, artisan breads, handmade yoghurts and local Pittormie farm berries whilst the chef prepares your cooked breakfast selection from our a la carte menu. Whether you wish to enjoy a healthy start to the day with our speciality soufflé organic egg white omelettes, superfood Porridge or a more indulgent traditional Scottish Grill featuring Braughing Sausages, Stornoway Black Pudding and locally sourced Organic eggs cooked to your liking. In the Evening Dine in Restaurant 1596 in the evening from 6.30pm where the crisp white linen, candlelight, our refined Grill menu and wines from the extensive club selection combine to produce a relaxed yet decadent dining experience. Local Scottish produce shines on a menu designed to showcase the very best of our local larder with Dry Aged Beef from the Buccleuch Estate, Hand Dived Orkney Scallops and St Andrews Bay Lobster all cooked to your own preference.
Our Bars Join us in the hub of the castle from 10.30am each day for a classic Brunch. The perfect pick me up after a red eye flight, the team will prepare our signature Bloody Mary s to help kick start your holiday in style. Highlands Bar is the perfect place to graze on a selection of locally sourced shellfish, small plates and snacks whilst recounting the day s events over a local beer or select from our range of wines by the glass. Enjoy an afternoon of croquet on the lawn and dinning on the patio as it catches the last of the days sun. In the evening the bar becomes a gathering place for members and guests mingling and trading tips and local knowledge, enjoy cocktails from our extensive repertoire with exquisite canapes from the kitchen or return post dinner to the patio for a cigar and malt whisky where the team will have open fires ablaze to take away the chill. The Wee Bar The original Club Bar and a member favourite, enjoy classical bar favourites from the extensive menu all freshly prepared in the Pittormie kitchen using only the finest ingredients, this really is bar food at its best! Complement the Aberdeen Angus Club Burger or Beer Battered Fish & Hand cut chips with one of the local craft ales tucked away in this little cosy corner.
The Castle Drawing Room The perfect place to enjoy a morning coffee, you can t help but feel relaxed as you sink into the deep sofas, on sunny days sunshine streams through the large bay windows providing lots of natural light for reading or you can simply enjoy the garden views and spot the passing wildlife. Spend an afternoon enjoying a Traditional Afternoon Tea in the castle drawing room, your dedicated server will present a variety of delicate finger sandwiches, savouries and dainty cakes along with a selection of finest loose leaf teas, a glass of champagne completes this decadent British tradition. In the evening enjoy cocktails and canapes prior to moving through to one of the elegant castle private dining rooms for dinner.
Private Dining The original Castle Dining Room provides the ideal setting for private parties of up to twelve guests. The elegant mahogany table extends the length of the room, adorned with the finest silver this refined setting complete with sparkling crystal chandelier is the perfect choice for a memorable meal. You will enjoy a bespoke gourmet tasting menu prepared to your exact specification with matching wine paired by our sommelier. The Castle Stag Room with large round table adorned with elegant silver candelabra is the perfect location for smaller private parties, this intimate setting can accommodate parties of up to eight whichever room you select our dedicated team will look after your every need to ensure a truly exceptional dining experience to remember. Should you wish to add a Scottish twist to the evening we can arrange a bagpiper and full Highland dress for all the gents. Chef can even provide a course including the famous Scottish delicacy Haggis!
The Terrace Enjoy a BBQ or relaxed dining on our wonderful terrace set just above the lawn and overlooking the castle, the terrace is a fantastic location to dine under the cover of our stretch tent whatever the weather. Begin the feast by selecting your favourites from the locally sourced langoustine, lobster and oysters on the shellfish buffet, enjoy a chat with the chefs as they grill your chosen meat and fish exactly as you like them but be sure to leave room for the wonderful array of handmade desserts including our signature White chocolate cheesecake with Pittormie farm Raspberries and indulgent Dark Chocolate Marquise. A Pittormie BBQ is a wonderful opportunity to relax with fellow members and guests, catching up with old acquaintances and making new friends.
Whisky Tasting at Pittormie A visit to Scotland would not be complete without a taste of our national spirit. Whisky has been produced in Scotland for at least 600 years and is world renowned for its quality and production standards. Here at Pittormie we offer tailor made experiences to suit your needs, choosing the right whiskies for you from our extensive range of over 100 malts. One of our trained professionals will lead you through the world of malt whisky, highlighting the steps involved in the production of whisky from the farm to the glass. We will also discuss the history of whisky in Scotland and its cultural importance, regional styles of whisky and how to match whisky with food. Most importantly you will get a chance to taste some of the finest malts in Scotland, examining how each malt has its own unique character. By the time your tasting experience has ended you will have a greater understanding of how whisky is made, its origins and importance in Scotland and most likely a few new favourite whiskies to add to your wish list!
