HISTORY OF MACARON In 1930, Pierre Desfontaines, had the original idea of the macaron, sticking two macaron shells together with creamy ganache as filling. Since then, the macaron recipe has never charged. WHAT IS A MACARON? A macaron is commonly filled with jam filling or ganache in-between two cookies. the cookie is meringue based from a mixture of egg whites, almond flour, and both granulated and confectionery sugar. ABOUT MACARONS Macarons have become the most covered cookie in France, particularly in Paris. They are a trendy item for people to serve, the ideal breakfast treat, the beloved cookie of Parisian tea salons, the fashionable gift to give, and the ideal cookie for holidays such as Valentine s Day, Mother s Day, Thanksgiving, and Christmas. OUR MACARONS These small, round cakes, crisp on the outside, smooth and soft in the middle are made every morning in our laboratory. The owner Vincent Benoliel and executive pastry chef Francois Paille, measures out very precisely the required amounts of almond, eggs and sugar, before adding one final ingredient, a pinch of unique knowhow, essential to the making of such a delicacy. Once cooked and filled, the macarons are put to one side for one day before going on sale, the time it takes to achieve a perfect balance between texture and flavor. With each new season, Le Macaron by Le Boudoir pays tribute to its most famous creation by creating a new flavor. Nothing in the world compares to our finely crafted French macarons, flavored meringue delicacies with ganache centers. Available in prismatic and natural colors, these delicious treats are a true delight, offering a magical combination of crunchy, crewy and sweet in each low-fat, gluten-free bite.
