u LUNCH Barbecued Chicken Fingers RECIPE IS WELL SUITED TO WEIGHT LOSS / MAKES 2 SERVINGS These tasty treats are perfect served with a large fresh salad and a spicy dipping sauce. Let the chicken strips marinate for at least 1 hour to allow the delectable citrus taste to permeate the meat. If you use wood barbecue skewers, soak them in water while the chicken is marinating. (Watersaturated skewers won t catch fire on the barbecue.) 1½ tablespoons olive oil Juice and zest of 1 large lemons ¾ pound boneless, skinless chicken breast, sliced into 20 strips Sea salt Freshly ground black pepper 10 small wooden skewers, soaked 1. Preheat the barbecue to medium-high heat. 2. In a medium bowl, whisk together the olive oil, lemon juice, and lemon zest. 3. The saltiness in the sauce comes from the black olives, which are not only delicious, but also very high in iron, vitamin A, vitamin E, and antioxidants. Olives are very good for cardiovascular health as well as cancer prevention, which is why olive oil is considered to be part of any healthy diet plan. This recipe uses zucchini noodles, made by cutting zucchini into thin strips by hand or with a spiralizer. ½ pound lean ground beef ½ onion, chopped ½ tablespoon minced garlic 1 celery stalk, chopped fine 5 tomatoes, chopped ½ tablespoon chopped fresh basil ½ teaspoon chopped fresh oregano ¼ teaspoon red pepper flakes Sea salt Freshly ground black pepper ¼ cup kalamata olives, pitted and quartered ¼ cup low-sodium beef stock Juice of 1 lemon 4 cups zucchini noodles 1.
