2 Introduction The OlyBet Flair Mania 2017 competition will be held on January 26 th 2017 at Olympic Voodoo Casino at Radisson Blu Hotel Latvija, 55 Elizabetes street in the city of Riga, Latvia. OlyBet Flair Mania 2017 is a part of World Flair Association s Grand Slam 2017. OlyBet Flair Mania 2017 will have a qualification round and the finals. Time limit is 4 minutes for the qualification round and 7 minutes for the finals. Each participant will have to make 2 cocktails. Main sponsor of the event is OlyBet. 3 Support us and spread the word. General Rules - Please read carefully. There are some changes from previous years! 1. Punctuality 1. All bartenders are required to register for the competition on January 25 th from 18:00 until 20:00 at the special registration desk in front of the hotel reception. 2. All bartenders are required to attend the briefing which is going to be at January 25th 2017 at 20.00 at Olympic Voodoo Casino poker area 3. ALL competitors must be on time for the registration, briefing and Prize Giving. Any late arrivals will be penalised. 4. After the finals, there will be a press-conference held where representative of judges panel will give short comments about each of the finalists. THIS WILL BE THE ONLY TIME WHEN JUDGING PANEL WILL GIVE ITS OFFICIAL STATEMENT ABOUT PERFOMANCES! Any questions, suggestions, unclarities are welcomed starting from January 28 th and must be sent in written form to the judges. 2. Registration & Payment 2.1. Registration could be closed earlier due to reach of maximum number of participants. The number of participants is limited to 60 bartenders max. 2.2. After succeeding the maximum number of participants waiting list will be made and in a case, someone is stepping out of the competition, bartenders from the waiting list will be offered to participate in order of registration time. Waiting list will be valid until January 16 th 24:00 (Latvian time). 2.3. Participation fee is 50 EUR and must be paid in advance using Paypal or direct bank transfer 3 days after your registration will be confirmed. You will receive instructions, bank and Paypal account details after submission of registration form. THE REGISTRATION FEE IS NON-REFUNDABLE. 2.4. REGISTRATION IS ONLY THEN COMPLETE WHEN THE PAYMENT HAS BEEN RECEIVED AND A CONFIRMATION LETTER HAS BEEN SENT BACK TO THE COMPETITOR. TO AVOID TRANSACTION DELAYS SEND US A PAYMENT CONFIRMATION FROM YOUR BANK OR PAYPAL ACCOUNT WHEN THE PAYMENT IS MADE. Any financial losses connected for example with early flight bookings while not having complete registration will not be refunded or taken into consideration 2.5. It is not allowed to pass the entry fee to another person. 2.6. The fee should be paid in EURO.

4 2.7. If there are any transaction fees, they should be covered by competitor, so choose the best suiting payment mode. 2.8. If the payment hasn t been made in the time period given the registration will be cancelled and given to the first waiting list entry available. 2.9. All competing bartenders as well as their supporters must be at least 18 years of age. 3. Drinks & Sponsors 3.1. The main sponsor of this event is OlyBet 3.2. In the qualification round the bartenders have to make own creation cocktail in two portions. 3.3. In the finals bartenders have to make own creation cocktail in two portions. 3.4. Bartenders are allowed to use both working and exhibition flair techniques in any order for making both cocktails 3.5. Monin production shall not be counted towards the 10 % rule. 3.6. Tasting takes place both in qualification and in the finals. 4. On Stage 4.1. Each participant will have 4 minutes of show time in the qualifying round, 7 minutes of show time in the final round. 4.2. Competing bartenders will not be allowed to wear logos of any companies conflicting with the sponsors of the event. 4.3. There will be competition T-shirts provided for each participant. Participants must wear them while performing and being on the stage! (please specify the size in the registration forms, if this information is not provided in the form organizers will provide L sized shirt) 4.4. Attenttion! Music must be sent to flairmaniacs@gmail.com after the running order draw. Music must be in one mp3 file named after your running order, name and surname, for example 1_Ivars_Rutkovskis.mp3 (our DJ will copy them into his computer and play them from there. We will do a small music check before each competitor) Deadline for music is January 23 rd. Laptops, phones, ipods will not be accepted on the venue. 4.5. Competition sponsors (products) include: Monin syrups and purees 4.6. The new 2017 WFA scoring system will be used 4.7. WFA gradings will be awarded. Bartenders who will finish 4th, 5th or 6th will get a purple WFA grading and those finishing in 3rd, 2nd and 1st will receive a black WFA grading. Detailed information and description of WFA gradings can be found here http://worldflairassociation.com/gradings/ 4.8. ONLY two bar backs are allowed on stage at any time for each competitor. NO EXCEPTION! No one else will be allowed on stage during the competition. 4.9. Any acts that display low integrity, poor taste or disrespect for the competition, sponsors or the host facility are subject to disqualification from the competition. 4.10. If during the first 30 seconds of your routine your music fails, skips or stops working, you will be able to stop and start again. If it happens after 30 seconds, the DJ will attempt to continue playing your music or play something different.

5 4.11. No fire of any kind is allowed for interaction in one s routine 5. Station Setup 5.1. Time for setting up the bar on the stage in the qualifying and final round is max. 5 minutes for each participant. You will be timed and penalised a miscellaneous (-5 points) deduction for every 10 seconds if you go over this time. 5.2. Time for breaking down your bar will be 2 minutes. You will be timed and penalised a miscellaneous (-5 points) deduction for 10 seconds if you go over this time 5.3. All bottles used in the working flair must be set in at least half full. Bottles will be checked by the judges! 5.4. All bottles used in the exhibition flair must be set in at least 15ml (1/2oz) of liquid. Bottles will be checked by the judges! 5.5. The competitors are free to use any bottles they wish, as long as they have their labels off and stickered (except Monin syrups and purees). The organizers will provide different stickers in order to mark different liqueurs. All bottles are competitors responsibility. Only Flairmania stickers are allowed. WFA stickers will not be allowed on the bottles. (sponsors request) 5.6. Only insulation/electrical tape can be used on your bottles. NO EXCEPTIONS. 5.7. Only 4 strips of tape will be allowed on your bottles. 5.8. No empty bottles can be included in the competition bar set up. 5.9. A metal pour spout is required on the working flair bottles. Tapping (this means hitting in the pour spout to make it shorter) in pour spouts is NOT allowed! Organizers are not providing participants with pour spouts. 5.10. Any free-flowing pour spout can be used on all exhibition flair bottles. Pour spouts can taped (using electrical tape only) in place, if they are not restricting the flow of liquid. 5.11. All the ingredients for the cocktail (including garnishes) must be provided by the competitors themselves. Exception is Monin production from the list in appendix 2 5.12. There will be no bar tending tools provided, please bring your own bar tending equipment to prevent disappointment and failure. 5.13. Bartenders can set up the Martandi Mobile Bar portable bar station (see the picture in the appendix 1) any way they choose, but it is highly recommended that nothing starts on the upper bar surface to help with visibility for both the audience and the judges. 5.14. The Top 10 from qualifying advances to the Finals. The points from qualification are not added up. 6. Recipe rules. Qualification & Finals

6 6.1. In both qualification and the finals each bartender must make two servings (portions) of their own creation, which is going to be tasted. 6.2. The recipe must remain the same in both rounds (qualification and finals) 6.3. Cocktail is prepared on the stage during the performance. 6.4. At least one of the ingredients used in own creation should be a product from Monin non-alcoholic product range (for details see appendix), regarding the other ingredients you are free to use any product available in market all over the world. 6.5. Garnishes must be edible and readily available in most bars. 6.6. Garnishes should be attached to the glass. Plates, trays and artistic side elements will not be taken to tasting jury. 6.7. A napkin is mandatory under each drink. You will get a miscellaneous (-5) for not placing your drink on the napkin in times during your round. 6.8. Straw and stirrer usage must be written in the recipe and is up to each bartenders consideration regarding their recipes. If for example straw is not mentioned in the recipe and it is put in the cocktail (or vice versa), it will be considered a miscellaneous penalty per occurrence. 6.9. Recipes must be expressed in milliliters or centiliters. 6.10. It is allowed to use any method (build, stir, blend, shake, and muddle etc) for cocktail preparation. 6.11. Pre-mixed ingredients are strictly not allowed. It is necessary to make the drink on the stage from the ingredients indicated in the recipe. Judges will check ALL competitors and their bottles on stage. 6.12. All the ingredients and garnishes, except sponsor products from the list are participants responsibility. Please note that organizers will provide only those Monin products mentioned in the list. If you want to use any other product, you must bring it yourself. 6.13. Monin bottles will be given to each competitor in the backstage area and they will be 1/2 ¾ full. Syrup is not allowed for exhibition flair set up. 6.14. All the preparation must be done in the practice area, and there is no time limit. 6.15. The organizers will supply a limited amount of basic glassware (see appendix for more details). Participants are encouraged to be as creative as possible and to use their own glassware for their cocktails. 6.16. The maximum score for the cocktail is 50 points and it is divided in 3 subcategories as explained below. 6.17. There are going to be three professional tasting judges invited to give their marks for the drink creations on stage. These people will be chosen for their professionalism and experience in mixology events all over the globe. Each bartender s score will be the average from these tasting judges. The tasting panel will be open (judges will see the bartenders performing). There will be different tasting panel for qualification and the finals.

7 6.18. For the alcoholic ingredients, the bartenders are allowed to use any glass bottle available in the world and as many different glass bottles as needed (Your bottles don t have to contain the original alcohol that it came with, for example, it is allowed to put gin in a rum bottle and so on). ALL LABELS taken off and replaced with the competition stickers (the metal ring around the neck can stay on or off. It is your preference). ALL glass bottles used for flairing must be stickered and ONLY Flair Mania stickers are allowed. 6.19. Juices can be stored in any container that is used for everyday work behind the bar without any branded labels on it. In case of glass bottles, they need to be with metal pour spout and stickered with Flairmania sticker. (Please note that tetra packs and similar packaging are not allowed) 6.20. All the other ingredients must have their labels removed. Or covered if it is impossible. (this rule refers also to water bottles, energy drink cans, bitter bottles etc) 6.21. Organizers will provide both crushed and cubed ice. 6.22. Drinks recipes must filled in online via link sent no later than 16 th January. The recipes can be modified until 16 th January. 6.23. ATTENTION! If the recipes are missing after January 16 th it will be penalized as a missing drink in all rounds of participation (-50 points per occurrence so -100 points in total already before coming onto stage). Tasting points will not be affected so it means you may still make your drink, but the penalty will still occur. 6.24. ATTENTION! The recipe shall not be changed after January 16 th. If the drink made on the stage will differ from the one in the recipe sent miscellaneous or missing drink penalty will be applied considering differences occurred. 7. Running Order Draw 7.1. A special draw will be made on January 17 th and aired online to sort out the running order of the qualification round. 7.2. This event will be broadcasted online and everybody is more than welcome to watch it. 7.3. The running order will be published immediately on FlairMania facebook page and on WFA facebook page 8. Other 8.1. All rules and guidelines are subject to change at the discretion of the competition organizers. 8.2. Official communication language is English and all the changes and updates will be sent to the email addresses provided during the registration. Competitors are asked to check their emails regularly in order to be informed about the latest updates regarding competition

The participant whose video from the Olybet Flairmania 2017 will get the most views in Flairmania YouTube channel until 1.10.2017. will be awarded with complimentary business class room in the official hotel of Flairmania. Big Ass Move competition rules Bartenders who will qualify in 11. 15. place will have a chance to participate in the Big Ass Move (BAM) competition with a prize of 100 Eur. Each bartender will get three attempts to land his/her biggest move. The move has to be the same in all of the attempts. If the move is landed it will be judged and there are no more attempts for the participant. Judges will give a score from 1 10. Whoever gets the highest score wins. If the move is not landed in none of the three attempts participant is out of the competition. Before the BAM competition bartenders will be asked to state how many objects his/her move will consist of and after that draw their starting number for BAM competition. Best cocktail award

10 The cocktail that will get the most points from the tasting jury will be awarded a 100 Eur prize. Only the scores from the elimination round will be taken into consideration. Monin Special award Monin representatives will be looking for the best trick with Monin. You will not lose any score by just simply pouring the chosen Monin product, but if you do something extra with Monin what will catch the eyes of Monin people, you have a chance on winning a special prize from them. WFA COMPETITOR CODE OF CONDUCT As a competitor in any WFA Grand Slam competition you are required to behave with respect and decorum throughout the entirety of the competition. Sponsors pay a lot of money to give us the opportunity to have these great events all over the world, so let s treat them with respect so that they will want to repeat the competition the next year Dress Code During the competition you are required to dress accordingly to what is expected of you. In some cases you will have to wear the t-shirt provided by the sponsor on stage. In this case, make sure that it is clean and ironed and not all messy when on go on stage with it. If you require another t-shirt ask the organising staff to provide you with one You should treat the stage like you would any bar. So no open toe shoes, like flip flops or sandals, but trainers or shoes is fine. You are NOT allowed to wear shorts on stage. Even if it is an outside competition in the sun They look messy and unprofessional Please make sure your trousers are clean and tidy and not covered in rips and tears. In some cases you may want to wear a costume. This is fine, but nothing vulgar. No nudity of any kind is allowed during your performance. If the organiser, judge or sponsors are not happy with the way you have presented yourself you will be asked to change, incur a deduction (-5 miscellaneous) or get disqualified from the competition. Behaviour

11 Competitions can be stressful times and everyone wants to do their best, but remember everyone is in the same boat so remember to treat EVERYONE with respect. Including the staff. The competition staffs are there to help you. If you are rude or arrogant towards them, you may face disqualification, or refusal to enter the next Grand Slam competition. Any rudeness or disrespect towards other competitors can face disqualification. This can be at anytime throughout the competition, in the practice area, on stage or where ever. Try and help out other competitors whenever you can. The judges have a difficult decision and are always willing to answer your questions after a competition, but any rudeness or disrespect towards them could mean refusal to enter the next Grand Slam competition. Announcements This is a big moment for everyone, whether it is announcing the finalists or the overall winners. Everyone is nervous and everyone wants to win. If you are not happy with your placement, DO NOT walk off stage in a huff. Collect your prize and wait for the all clear to get off the stage once all announcements are finished. Failure to do so can result in disqualification or being banned from the next Grand Slam comp. When it comes to announcements please wear either the competition t-shirt or your sponsor or representation s attire. Each competition is different and you will be briefed by the organisers. We do not want to see you in your shirt ready for a night out. It is also NOT allowed to be drunk when you are on stage collecting your prizes, and we do NOT want to see you with a drink in your hand on stage. Failure to follow these guidelines can mean you not receiving your prize and or being disqualified from the competition. Bottles to be used As we have mentioned before the sponsor pay a lot of money to put on these competitions so they want to see their bottles used at competitions as much as possible. Anyone thought to be blatantly disregarding the sponsors bottles will be disqualified from the comp or incur a major deduction Music This will always be down to the organiser as to when they want your music. Please make sure it is clearly labelled and is only on ONE CD!

12 After the competition Once the competition is over you have the chance to chat with the judges and discuss your scores on how you can improve for the next comp. Any discrepancies in the scores should be put in writing to the World Flair Association, sent to info@worldflairassociation.com by the individual who is not happy. The World Flair Association will try and solve any problems with scores or results in any way they can. Overall Any competitor not respecting the rules of the competition, the judges, fellow competitors or the sponsors can face disqualification from the competition or be banned from the next Grand Slam competition.
