ORZO WITH GARLIC SHRIMP AND COURGETTE With fresh herbs and almond slivers Garlic Shallots Almond slivers Fresh basil f Fresh oregano f Courgettes f Orzo Shrimps f 9 Total: 40-45 min. L Calorie-conscious * Easy d Lactose-free Eat within 3 days b Family You'll be using fresh garlic, basil and oregano to flavour the shrimp. All these flavours will blend together in the creamy orzo. To add some excitement to the dish, you'll garnish it with almond slivers adding a nice crunch.

A GOOD START PREPARATION Prepare the stock. Press or finely chop the garlic. Cut the shallots into half rings. Finely chop the almond slivers. Separate the leaves from the fresh basil and oregano and finely chop. Cut each courgette in quarters lengthwise and then into small dices. EQUIPMENT A pan with a lid, a wok or a deep saucepan with a lid and tin foil. Let s start cooking the orzo with garlic shrimp and courgette. COOK THE ORZO Heat half the olive oil in a pan with a lid and fry the orzo for 1 minute at medium to low heat t. Stir in the stock and simmer for 10 12 minutes, covered, at low heat until all the stock has been absorbed. Stir regularly and add a little extra water if the orzo becomes too dry. FRY THE SHRIMPS In the meantime, heat the remaining olive oil in a wok or deep saucepan and gently fry the garlic and shallots for 2 minutes at low heat. Add the shrimp, the majority of the shaved almonds and the majority of the fresh herbs and fry for 3 4 minutes at medium-high heat. Add extra-virgin olive oil and season with salt and pepper. In the same wok, fry the courgette for 1 minute at medium to high heat. Add 1 tbsp water per person, season with salt and pepper and simmer, covered, for 5 6 minutes at medium-low heat until the courgette is done but still crunchy. SEASON Add the orzo to the wok or deep saucepan and heat for another minute at high heat. Season with salt and pepper. SERVE AND GARNISH Serve the courgette-orzo with the shrimp and garnish with the remaining almond shavings and the remaining herbs. ttip: You won t be using all the orzo in this dish. If you want to use it all, you'll need an additional 175 ml stock per person. As this does change the balance in the dish, the flavours become less concentrated. You'll carefully flatten the fillet first, making it extra tender and allowing it to cook evenly. You ll cover it in pesto before frying it which gives it a delicious flavour.

A GOOD START PREPARE THE POTATOES In the meantime, thoroughly scrub or peel the potatoes and cut into coarse pieces. Put the potatoes in a pan with a lid and barely cover with water. Add a little salt and bring to the boil while covered. Boil the potatoes for 12 15 minutes until done. Drain and set aside, covered. EQUIPMENT A pan with a lid, baking paper or clingfilm, skewers, a frying pan with a lid, a salad bowl and a small bowl. Let s start cooking the chicken fillet with pesto-potatoes. STUFF THE CHICKEN In the meantime, cover the chicken with a piece of baking paper or clingfilm and use a frying pan to beat the chicken until flat. Remove the paper or foil, cover half the chicken fillet with 1 tsp green pesto per person and sprinkle with salt and pepper. Fold the chicken fillet and secure the edges with 2 skewers. FRY THE CHICKEN Heat half olive oil in a frying pan with a lid and fry the chicken fillet at high heat until brown on all sides. Turn down the heat to medium-low, cover the pan and fry for 10 minutes or until the chicken fillet is done. Turn regularly. Cut the apples into quarters, remove the cores and dice the apple. Thinly slice the radishes and finely chop half the green radish tops. Mix the sweet pepper, apple, radish and radish tops in a salad bowl. PREPARE THE DRESSING Use a small bowl to whip up a dressing of the remaining olive oil, the honey, mustard, white balsamic vinegar, salt and pepper and mix into the salad. Eggs are a great source of natural proteins making them a nutritious vegetarian option. Shakshuka is an easy dish to cook that is also great for lunch - use this recipe card as a base to create your own version! It's a great way to use op leftover vegetables.

A GOOD START PREPARATION Pre-heat the oven to 210 degrees. Mince the onion and press or finely chop the garlic. Remove the seed pods from the red chilli pepper and the sweet pepper and finely chop. Dice the tomatoes and finely chop the curly parsley. EQUIPMENT A wok or deep saucepan with a lid. Let s start cooking the traditional shakshuka with eggs. FRY THE FLAVOURINGS Heat the olive oil in a wok or deep saucepan with a lid and gently fry the onion, garlic and red chilli pepper for 2 minutes at medium-high heat. Add the sweet peppers, the tomato and half the curly parsley. COOK Add 30 ml water per person to the wok or deep saucepan and crumble in the vegetable stock cube. Bring to the boil, turn down the heat and allow to simmer, covered, for 5 minutes. Season with salt and pepper. Sprinkle a little salt and pepper onto the eggs. Crumble all of the goat s cheese over the dish, cover the pan and allow the eggs to set in 10 minutest. Take the lid off the pan for the final 4 minutes, turn up the heat a little and allow the excess moisture to evaporatett. BAKE THE BAGUETTES In the meantime, bake the spelt baguettes in 5-7 minutes in the pre-heated oven, or until golden brown. ttip: The eggs will be done when the whites begin to turn white, but the yolks are still runny. Of course, if you prefer hard-boiled eggs, you can cook the dish a little longer. SERVE Transfer the dish to plates. Garnish with the remaining curly parsley and serve with the spelt baguette. ttip: How moist the shakshuka ends up strongly depends on the surface of your pan. If you re using a wok, less moisture will evaporate. Try not to move the fish around the pan too much while frying to prevent it from falling apart. Adding lime to the mayonnaise makes it nice and fresh, which balances the sweet coconut crumble.

A GOOD START FRY THE POTATOES Pre-heat the oven to 200 degrees. Thoroughly scrub or peel the potatoes and cut into wedges. Heat half the olive oil in a deep saucepan with a lid and fry the potatoes for 25 35 minutes, covered, at mediumhigh heat. Take the lid off the pan after 20 minutes. Turn regularly and season with salt and pepper. EQUIPMENT A deep saucepan with a lid, a pan with a lid, a baking sheet lined with baking paper, a small bowl and a frying pan. Let s start cooking the fried cod with coconut crumble. PREPARE THE BROCCOLI In the meantime, bring ample water to the boil in a pan with a lid. Cut the broccoli head into florets and dice the stem. Add the broccoli to the pan, boil for 3 5 minutes and drain t. Transfer the broccoli to a baking tray lined with baking paper, drizzle with the remaining olive oil, season with salt and pepper and toss. Roast the broccoli in the oven for 16 20 minutes or until done and crispy tt. MAKE THE LIME-MAYONNAISE In the meantime, juice the lime. Use a small bowl to mix 1 tsp lime juice per person with the mayonnaise. Add the grated coconut and some salt and fry for 1 2 minutes until golden brown. Make sure the coconut doesn t burn. Remove from the pan and set aside. Wipe the pan clean with a paper towel. FRY THE FISH Heat the remaining butter in the same frying pan to medium-high heat. Tap the cod dry with a kitchen towel and season with salt and pepper. Fry for 2 3 minutes on each side or until the fish is done. SERVE Transfer the roasted potatoes to plates. Add the cod and roasted broccoli on the side. A GOOD START PREPARATION Pre-heat the oven to 200 degrees and prepare the stock. Cut the aubergines into slices no more than ½ cm thick. Several steps Eat within 3 days Today s dish is an Italian party on a plate. The chicken fillet is stuffed with ricotta and oregano and wrapped in coppa di Parma. The risotto is creamy but still nice and fresh because of the lemon.

A GOOD START PREPARATION Pre-heat the oven to 200 degrees and prepare the stock. Mince the shallots and press or finely chop the garlic. Cut the courgette into quarters lengthwise. Cut the quarters in half widthwise. Transfer the courgette to a baking sheet lined with baking paper and mix with half the olive oil, half the garlic, salt and pepper. Set aside. EQUIPMENT A baking tray lined with baking paper, a pan with a lid, a frying pan and a grater. Let s start cooking the stuffed chicken fillet wrapped in coppa di Parma. PREPARE THE CHICKEN FILLET Strip the leaves from the sprigs of fresh oregano. Cut the chicken fillet open and stuff it with the ricotta. Sprinkle the chicken fillet with the oregano leaves, salt and pepper and wrap with the coppa di Parma. Set aside. PREPARE THE RISOTTO Heat the remaining olive oil in a pan with a lid and gently fry the remaining garlic and shallots for 1 minutes at low heat. Add the risotto rice and fry, stirring constantly, for 1 minute. Add 1/3 of the stock. Allow the grains of rice to slowly absorb the stock. Stir regularly. Repeat until all the stock has been used up. The risotto is done as soon as the grains are soft on the outside but are still a little chewy at the centre. This takes around 20 25 minutes. Add a little extra water if the grains are not quite soft enough yet t. In the meantime, roast the courgette in the oven for 16 18 minutes. FRY THE CHICKEN In the meantime, heat the butter in a frying pan and fry the chicken fillet for 5 6 minutes on each side until done and brown. In the meantime, coarsely grate the Parmigiano Reggiano and finely grate the lemon peel (zest). Next, cut the lemon into wedges and coarsely chop the hazelnuts. Mix half the parmigiano reggiano and 3/4 tsp lemon zest per person into the risotto and season with pepper. SERVE Serve the risotto with the chicken fillet and the roasted courgette. Garnish with the lemon wedges and hazelnuts and sprinkle the risotto with the remaining parmigiano reggiano. ttip: Finished the risotto before the rest of the dish?
