There are 4 leaf grades: leaf, broken, fannings, and dust; Ronnefeldt does not buy dust! Handpicked leaves wilt in the sun; the leaves are then allowed to ferment from the outside in. Fermentation is stopped at the perfect time. also produced by the orthodox method: the 2 top tea leaves and 1 bud are handpicked and withered, fermentation is stopped right away through heat (in Japan with steam, and in china through pan roasting). Leaves stay green and are then dried and sorted. The tea leaves of the Yabukita tea bush have white, fine hairs on the underside. The plucking period is very short, only about 2 weeks. The leaves are withered for 72 hours and the resulting tea is very fine and elegant. Red Fruit Parfait (recipe makes 20 servings) 0.5oz/14g Ronnefeldt Red Fruit Tea (621018) 3oz/85g 3pc 2oz/56g Hot Water Egg Yolks Sugar 1pc Sheet Gelatin Gold (018040) 0.5oz/14g 4oz/113g 4oz/113g 4.5oz/127g Kirsch Egg Whites Sugar Heavy Cream Steep tea in hot water for 5 minutes, strain and bring to a boil. Whisk the yolks and sugar together, then add it to the tea and cook to 185ºF/85ºC. Add bloomed gelatin and Kirsch, and pour into a shallow pan to cool. Then over a water bath warm the egg whites and remaining sugar to 140 F/60 C. Whip on high to full volume. Whip heavy cream to soft peaks. Fold the meringue into the tea mixture and then fold in the cream. Pipe into desired molds and freeze. Chocolate Crunchy 2.25oz/64g Almond Flour (204162) 2.25oz/64g 2.8oz/80g 0.1oz/3g Pastry Flour Turbinado Sugar Salt 0.75oz/22g Cocoa Powder, Dutch Processed (504045) 2.8oz/80g Butter, Cubed Cold Combine almond flour, pastry flour, turbinado sugar, salt, and cocoa powder in a 5qt bowl. Add cold, cubed butter, and mix with paddle just until the mixture comes together and begins to clump. Bake at 350 F/175 C for 5 7 minutes. Assembly Remove Red Fruit Parfait from the mold and cut. Sprinkle Chocolate Crunchy on plate, and then place Red Fruit Parfait on top. Pipe dots on the edge with Arte Piatto Chocolate Sauce (505040), garnish with fresh raspberries, sprinkle Modern Cuisine LyoRaspberries (622004) and decorate with chocolate plaquettes of your choice.
