Honey Pork Chops Hands On Time: 10 Minutes Oven Time: 1 Hour and 15 Minutes Slow Cooker Time: 5-6 Hours 3-4 boneless pork chops ¼ cup honey 2 Tbs. cider vinegar 1/8 tsp. ground ginger 1 clove garlic, minced 1 Tbs. soy sauce dash black pepper Put all the ingredients, except the pork chops in a blender and mix well. Put the chops in a ziplock freezer bag and pour the marinade over them. Bake at 350 degrees for 1 hour and 15 minutes. Or grill. Or pop them in the slow cooker, cooking 5-6 hours on low. Freezer Instructions: After marinating, label the bag and freeze if saving for another day. Thaw completely in the fridge before cooking. Serving Suggestion: Brussels Sprouts, Roasted Sweet Potatoes Roasted Sweet Potatoes Hands On Time: 15 Minutes Bake Time: 30-35 Minutes ½ -1 sweet potato/person salt pepper olive oil Preheat oven to 425 degrees. Line a large cookie sheet with parchment paper. Rinse and scrub sweet potatoes. Chop into medium sized chunks. Toss in a large bowl with olive oil, salt and pepper to taste. Pour onto pan and bake for 30-35 minutes. Stir half way through baking time.

Chicken Posole Stew in the Slow Cooker Hands On Time: 10 Minutes Slow Cooker Time: 5-8 Hours Instant Pot Time: 30 Minutes about 2 boneless chicken breasts 1 can hominy, rinsed and drained 1 ½ cups chicken broth 1 can diced tomatoes, undrained 3 small carrots, sliced thin 2 green onions, sliced 2 cloves garlic, minced ½ Tbs. cumin 1 tsp. chili powder ½ tsp. oregano 1/8 tsp. cayenne pepper, or to taste ½ tsp. salt, or to taste pepper to taste Put the chicken in the bottom of the crockpot. Add the other ingredients on top, stirring to combine. Cook on high 5-6 hours or low 7-8 hours. Remove the chicken and shred with a fork. Return to the pot. Serve with cheddar cheese topping, if desired. Instant Pot Instructions: Add all ingredients to the pressure cooker pot. Set cook time for 30 minutes. Do a quick pressure release. Shred chicken, return to pot, and stir to combine. Serving Suggestion: Artisan Bread, Spinach Side Salad* *Use the other half of the box of spinach from the Cranberry, Mandarin, and Spinach Salad.

Ham and Swiss Scalloped Potatoes Hands On Time: 45 Minutes (including 30 minutes boil time) Bake Time: 20 Minutes 3-4 potatoes 2 Tbs. butter 2 Tbs. whole wheat flour 1 ½ cups milk, warmed salt and pepper to taste 1 cup diced ham ½ -1 cup shredded Swiss cheese Boil the potatoes in a large pan for about 30 minutes, or till tender when pricked with a fork. Cool potatoes slightly, then slice ¼" thick. In a large pan or skillet, melt butter over medium heat. Stir in flour, cooking 1-2 minutes till golden. Whisk in milk. Bring to low boil over medium heat. Remove from heat and season with salt and pepper. Layer potatoes, ham and Swiss in buttered casserole dish. Repeat layers. Pour white sauce over all. Bake 350 degrees for 20 minutes. Serving Suggestion: Cranberry, Pecan, Mandarin Spinach Salad with Raspberry Vinaigrette Cranberry, Pecan, Mandarin Spinach Salad and Raspberry Vinaigrette Time: 15 Minutes ½ box of baby spinach** chopped pecans dried cranberries thinly sliced red onions mandarin oranges raspberry vinaigrette* Combine all ingredients. Toss with raspberry vinaigrette. **Use the other half of the box of spinach for the Spinach Side Salad with the Chicken Posole Stew meal. *Raspberry Vinaigrette 1 ½ Tbs. seedless raspberry jam 1/3 cup oil 3 Tbs. red wine vinegar salt and pepper to taste Warm the jam in the microwave for a few seconds until it become slightly melted. Place all ingredients in a container with a tight-fitting lid. A mason jar works well for this. Shake to combine the ingredients.

Bowties and Smoked Sausage Time: 15 Minutes ½ lb. Bowtie pasta 1 small onion, chopped 1 garlic clove, crushed ½ green pepper 1 Tbs. olive oil ½ lb. Turkey smoked sausage, sliced 15 oz. Crushed tomatoes ½ tsp. Oregano ½ tsp. Basil Pinch of sugar Salt and pepper to taste Mozzarella, shredded or Parmesan, if desired Cook the pasta according to package directions. In a skillet, cook the onion and garlic in oil for a few minutes. Add bell pepper and sausage. Continue cooking over medium heat till onion is soft. Stir in crushed tomatoes and remaining ingredients. Drain cooked pasta and put it back into the cooking pot. Pour sauce over the pasta and stir to combine. Serve with cheese. Serving Suggestion: Orange and Red Onion Salad Orange and Red Onion Salad Time: 10 Minutes ½ - 1 orange per person, depending on the size of the orange approximately ¼ cup thinly sliced red onion kosher salt and black pepper to taste Peel and cut oranges in bite sized pieces. Toss red onion slices with oranges in bowl. Add kosher salt and pepper to taste.

Smoky Chipotle Chicken Tacos in the Slow Cooker Hands On Time: 10 Minutes Slow Cooker Time: 5-8 Hours Instant Pot Time: 20 Minutes 2 boneless chicken breasts about 1½ lbs. ½ green pepper, sliced 1 small onion, peeled and sliced ½ can Fire Roasted diced tomatoes, drained* ½ chipotle pepper in adobo sauce, finely chopped (not the whole can, just 1 pepper) 1/8 tsp. liquid smoke chicken broth, ½ cup (IP only) whole wheat tortillas shredded cheddar cheese lettuce, chopped Mix all of the ingredients together in the slow cooker. Cook on high for 5-6 hours or low for 7-8 hours. Serve in tortillas with cheese and lettuce, if desired. Instant Pot Instructions: Add 1/2 cup chicken broth. Add all ingredients to the pressure cooker pot. Set cook time for 20 minutes. Do a quick pressure release. *Save the other half of the can of Fire Roasted Tomatoes for the Mel s Diner Chili. **The other half of the can of kidney beans from the Mel s Diner Chili could be thrown in here as an option. Serving Suggestion: Tortilla Chips, Homemade Salsa Easy Homemade Salsa Yield: 3-4Servings Time: 10 Minutes 1 can of whole tomatoes 15 oz, drained ½ red onion, quartered a garlic clove whole or minced (whatever you have) 1 Tbs of lime 1 tsp of salt 1 tsp of cumin a small handful of fresh cilantro (I used almost a whole bunch) 2 oz. jalapenos Put everything in a food processor and blend until consistency is like you prefer. Serve chilled!

Mel s Diner Chili Hands On Time: 15 Minutes Slow Cooker Time: 5-6 Hours 1 lb ground beef 1 small onion, chopped 1-6 oz. can tomato paste 3 tomato paste cans of water 1 clove garlic, minced ½ can kidney beans, rinsed and drained*** 1 pack low-sodium chili seasoning mix* ½ can Fire Roasted tomatoes, undrained** salt and pepper to taste Brown the beef, onion and garlic. Drain and rinse under hot water. Add all the other ingredients. Simmer for a few hours or toss it in the crockpot and cook it on low for 5 or 6 hours. This recipe serves great as leftovers for lunches, and also freezes well! **Use the other half of the can of Fire Roasted Tomatoes from the Chipotle Chicken Tacos meal. ***Freeze the remaining beans for future use, or mix in with the Chipotle Chicken Tacos. *Chili Seasoning (This recipe equals the equivalent of one commercial sized packet) 1 Tbsp chili powder 1 tsp ground cumin ¼ tsp cayenne pepper ¼ tsp garlic powder ½ tsp onion powder 1 tsp salt ¼ tsp (approximately) freshly ground pepper Serving Suggestion: Cornbread Muffins

Cornbread Muffins Yield: 1 Dozen Hands On Time: 10 Minutes Bake Time: 15-20 Minutes 1 cup cornmeal 1 cup flour 1 Tbs. baking powder ½ tsp. salt ½ stick butter, melted ¼ cup sugar 1 egg 1 cup milk Stir the dry ingredients together in a bowl. Stir the sugar into the melted butter. Add the egg and milk. Pour this into the dry ingredients and stir, just to combine. Divide into 12 greased muffin cups. Bake at 425 degrees for 15-20 minutes.

Pumpkin Biscoff Monster Cookies Hands On Time: 20 Minutes Bake Time: 10 Minutes/Batch 2 sticks butter, softened 14oz jar Biscoff 3 eggs ½ tsp. vanilla 1 cup sugar 1 cup brown sugar 15 oz can pumpkin ½ cup flour 1 tsp. salt 2 tsp. baking soda 5 cups quick oats 2 cups chocolate chips 2 cups M&Ms Cream butter and Biscoff together in large mixing bowl. Mix in eggs, vanilla, sugars and pumpkin. Add flour, salt, baking soda and quick oats. Mix till well combined. Stir in chocolate chips and M&Ms. Drop by spoonfuls onto baking stone or cookie sheet. Bake at 375 degrees for 10 minutes.
