Time Allocation- Prep 25 Min Cook 10 Min Formal Bowtie Easy Pasta Pan with Chicken Sausage and and a Green Salad with Santa Home Fe Made Couscous Vinaigrette (for 2) (for 4) Santa Fe Couscous Ingredients Easy Stovetop Chicken Ingredients 2 Large Chicken Breasts 1 Tablespoon Thyme and Seasons, American Southwest Seasoning 1 Tablespoon Butter Approximately 195 calories per normal serving *Ingredients make two generous servings. 1/2 Cup Uncooked Couscous 1/2 (14.5 ounce) Can Chicken Broth 1/2 (15 ounce) Can Black Beans 1 Roma Tomato 1/2 Red Bell Pepper 1 Lime 4 Green Onions 1/8 Cup Fresh Cilantro 1 Ear of Corn on the Cob (fresh or frozen) 1 1/2 Tablespoons Olive Oil 1 Tablespoon Balsamic Vinegar 1/4 Teaspoon Cumin Black Pepper to Taste Approximately 365 calories per normal serving *Ingredients make three generous servings. Formal Bowtie Pasta Easy Pan withchicken Sausageand and a Green Salad with Home Santa Made Fe Couscous Vinaigrette (for 2)(for 4) 1 2 Bring 1/2 can of chicken broth to a boil in a small pan with a lid. Once chicken broth is boiling, add 1/2 cup dry couscous, stirring it into the stock. Remove from heat and cover with a lid and let rest. 3 Wet a paper towel with water and ring it out. After shucking the ear of corn (if fresh), wrap the ear of corn in the wet paper towel and place in the microwave. 4 Place a medium sized salad bowl on the counter next to your cutting board. Remove the stems from the cilantro and finely chop 1/8 cup of cilantro leaves. Slice 4 green onions discarding the leafy portions. Add both to salad bowl and juice one lime over the greens. Microwave corn on the cob for 6 minutes on high. When done, use tongs to remove the corn from microwave and place in ice to cool it off. 5 6 After washing, removing stem, seeds and inner ribs of red bell pepper, dice 1/2 of it. Cut ends off of one Roma tomato and dice it as well. Cut kernels off of the corn on the cob and add all three items to salad bowl with cilantro, onion and lime juice. Add 1 Tbsp. balsamic vinegar, 1 1/2 Tbsp. olive oil, and 1/4 tsp cumin. 7 After patting 2 chicken breasts dry with a paper towel, season all sides with 1 Tbsp. American Southwest seasoning and salt. Rub spices into chicken. In a frying pan over medium heat, melt 1 Tbsp. butter. Add chicken breasts to frying pan. Cover pan with a lid. Cook each side for approximately 4 minutes. Open the can of black beans, rinse beans in a strainer under faucet, add 1/2 of them to salad bowl. Fluff the couscous with a fork, ensuring that none is clumping and add to salad bowl as well. Salt and Pepper to taste. Mix together thoroughly until all is combined evenly. 8 Once the chicken is fully cooked and the juices run clear, serve alongside the Santa Fe Couscous and enjoy your Delicious Family Dinner!
