u BREAKFAST Sweet Potato Hash RECIPE IS ENERGY BOOSTING / MAKES 2 SERVINGS Starchy vegetables are in the gray area for the Paleo diet, but according to Loren Cordain, the founder of Paleo, sweet potatoes can be eaten in moderation. To make this a whole meal, hollow out sections in the cooked hash and cook sunny-side up eggs right in the same pan. ½ tablespoon extra-virgin olive oil ¼ sweet onion, peeled and chopped 2 sweet potatoes (about 1 pound), grated ¼ teaspoon chopped fresh thyme Sea salt 1. Place a large skillet over medium-high heat; add the oil. 2. Add the onion and sauté until it begins to caramelize, about 5 minutes. 3. Add the sweet potato and cook until browned. 4. u LUNCH Green Bean Salad RECIPE IS WELL SUITED TO WEIGHT LOSS / MAKES 2 SERVINGS Green bean salads are not often made at home because of the common over-processed ones found in supermarkets and even restaurants. This version is incredibly fresh and colorful, and simply flavored with a squeeze of lemon juice and fresh herbs. Blanching cooks the beans just slightly, and makes the beans a bright green. 1½ tablespoons fresh lemon juice ¼ cup chopped fresh basil 1 tablespoon chopped sun-dried tomatoes 1 tablespoon olive oil ½ teaspoon minced garlic Sea salt 1½ cups fresh green beans, trimmed and cut into 1-inch pieces 1½ cups fresh yellow beans, trimmed and cut into 1-inch pieces 1 red bell pepper, seeded and minced ¼ cup shredded carrots ¼ red onion, thinly sliced 1. In a small bowl, whisk together the lemon juice, basil, sun-dried tomatoes, olive oil, and garlic. Season with salt and pepper. 2. In a large saucepan, blanch the green beans and yellow beans in lightly salted boiling water for 2 to 3 minutes until just crisp-tender. Using a slotted spoon, immediately transfer the beans to a bowl of ice water to cool, then drain. 3. In a large bowl, combine the beans, red pepper, carrots, and onion. u DINNER Chili Lime Shrimp RECIPE IS WELL SUITED TO WEIGHT LOSS / MAKES 2 SERVINGS Shrimp on the barbecue is the epitome of summer indulgences, and these tasty morsels are very easy to prepare on nights you need to eat and run. The lime used to flavor the shrimp is a nice change from the usual lemon, and limes offer great health benefits just like their citrus cousins. Limes have much more vitamin C than lemons; they were commonly used on ships to prevent scurvy, which resulted in the nickname limeys for English sailors. Limes promote healthy gums, teeth, and bones, as well. Serve the grilled shrimp with a large tossed salad. 1 tablespoon olive oil Juice and zest of 2 limes ½ teaspoon paprika ¼ teaspoon chili powder 12 large shrimp, peeled and deveined 4 wood skewers, soaked in water 1. In a medium bowl, combine the oil, lime zest and juice, paprika, chili powder, and pepper. 2. Add the shrimp and toss to coat. Put the bowl in the refrigerator, and let the shrimp marinate for 20 to 30 minutes. 3. Preheat the barbecue to medium-high. 4. u DESSERT Chocolate Fondue RECIPE IS ENERGY BOOSTING / MAKES 2 SERVINGS Fondues were the go-to dessert at parties in the 1960s, and this fun dish is making a comeback. You can dip anything Paleo friendly into the glossy chocolate sauce, but fresh fruit is particularly yummy. Homemade Paleo marshmallows, cookies, and even cake can also be festive. If your chocolate firms up too much to dip, simply melt it again on low heat. 6 ounces 72 percent dark chocolate, chopped ½ cup almond butter Fresh fruit (bananas, peaches, oranges, strawberries, mangos) or Paleo cookies 1. Place the chocolate in a double boiler over low heat, or a stainless steel bowl over a pot of gently simmering water. 2. Melt the chocolate and then whisk in the almond butter until very smooth. 3.
