Cube Steaks and Gravy in the Slow Cooker, Rice and Peas Time: 15 Minutes Hands On, 5-8 Hours Cook Time ½ cup flour 2 tsp. salt ½ tsp. garlic powder ½ tsp. dry ground mustard 2 lbs. cube steak 2 Tbs. vegetable oil 1 onion, sliced 1 packet brown gravy mix 1 cup water Stir flour, salt, garlic powder and ground mustard together in a bowl. Dredge cube steaks in flour. Brown in skillet in vegetable oil. Remove and place steaks in crockpot. Add onion to skillet and cook a few minutes. Stir gravy mix and water together. Pour into skillet, scraping up the browned bits. Pour gravy and onions over meat in crockpot. Cook on low 7-8 hours or high 5-6 hours. Cube Steaks and Gravy Instant Pot Use 1 ½ cup water. Stir flour, salt, garlic powder and ground mustard together in a bowl. Dredge cube steaks in flour. Hit the sauté button and add olive oil to the pot. Add steaks and onions and cook until steaks are browned. Stir gravy mix and water together. Pour into pot. Set cook time for 12 minutes. Do a quick pressure release. Serving Suggestion: Rice and Peas

10 Minute French Dip Sandwiches, Sliced Tomatoes, Sweet Potato Fries Total Time Needed: 15 Minutes 1 can beef broth 1 lb. roast beef 4 long rolls Mayonnaise Italian seasoning 8 slices provolone cheese Add the beef broth to a large skillet over high heat. When the broth starts to steam, reduce heat to medium and add the roast beef and cover. Let warm for about five minutes, until the roast beef is no longer pink. Meanwhile, preheat the oven broiler. Slice rolls in half and place them on a baking sheet cut side up. Spread a thin layer of mayonnaise on the top side of the buns and sprinkle with Italian seasoning. When the roast beef is warm, remove it from the broth using a slotted spoon or tongs and divide between the rolls. Lay two slices of cheese over the roast beef on each roll. Broil for 2-3 minutes, until bread is toasted and cheese is melted. Serve with extra broth for dipping. Sweet Potato Fries 3-4 large sweet potatoes olive oil Kosher salt black pepper Wash the sweet potatoes and cut them into sticks. Put them in a large bowl and drizzle with olive oil. Sprinkle with salt and pepper and toss to coat. Place them on a greased baking sheet and bake at 400 degrees for about 30 minutes, or until the potatoes are tender. Serving Suggestion: Sweet Potato Fries and Sliced Tomatoes

Scrambled Eggs, Hoe Cakes, Fruit and Bacon Total Time Needed: 15 Minutes For the Hoe Cakes 1 cup cornmeal 1/2 cup flour 2 tsp. baking powder 1/4 tsp. of salt 1 egg 1 cup milk oil for frying Stir the dry ingredients together in a bowl. Mix in the egg and milk. Fry in a skillet or griddle like you would a pancake. Serve with butter. Serving Suggestion: Scrambled Eggs, Bacon, Fresh Fruit

Red Beans and Rice with Ham, Quick Cole Slaw Time: 20 Minutes Hands On, 15 Minutes Cook Time 2 cups of dry rice oil for sautéing 1 onion, chopped 2 cloves garlic, minced or crushed 1 green pepper, chopped about 3 cups of diced ham 2 cups chicken broth 1 can Fire Roasted diced tomatoes, or regular diced tomatoes, undrained 2 tsp. hot sauce 2 cans kidney beans Cook the rice according to the package directions. In a skillet, sauté the onion and garlic in oil. Add the green pepper and ham and cook for a few minutes, until the green pepper is tender-crisp. Add the chicken broth, tomatoes, hot sauce and beans. Bring to a boil. Cover and turn down the heat, letting it simmer for 10-15 minutes. Serve over the cooked rice, with extra hot sauce for those who like more spice. Quick Cole Slaw 1 bag of slaw mix ½ cup mayonnaise ¼ cup sugar 1 Tbs. red wine vinegar salt & pepper Put the slaw mix in a big bowl. Mix the other ingredients together and pour over the slaw, tossing to mix Serving Suggestion: Quick Cole Slaw

Chicken and Broccoli Stuffed Shells with Alfredo Sauce, Tossed Salad, Garlic Bread Time: 20 Minutes Hands On, 45 Minutes Cook Time (allow additional cook time if you are not using pre-cooked chicken) 3 cups cooked chicken, chopped 3-4 cups cooked and salted broccoli 2 cups finely shredded mozzarella 1 box jumbo shells, cooked according to package directions 2 jars alfredo sauce Mix the chicken, broccoli and mozzarella together in a bowl. Fill the shells with the mixture. I used half of the shells and froze the other half. Half of the shells filled a 9 13 casserole dish. Spread a small amount of the sauce on the bottom of the pan. Lay the shells in the dish in a single layer. Pour the sauce over the top. Cover with foil and bake at 350 degrees for about 45 minutes or till hot and bubbly. Serving Suggestion: Tossed Salad and Garlic Bread

Chicken Pot Pie, Rolls, Sliced Cantaloupe Time: 10 Minutes Hands On, 1 Hour Cook Time 2-3 cups cooked chicken 1 bag of frozen stew vegetables 1 can of chicken broth 1 can of cream of chicken soup (or celery soup) 1 pre-made pie crust Pour the frozen vegetables over the top of the chicken that you place in the bottom of the casserole dish. No need to thaw the veggies. Mix the broth and cream of chicken soup. Add pepper. I like a generous sprinkle of pepper. Pour this mixture over the top of the veggies and chicken. Unfold the crust and spread it out over the casserole dish. Cut in a few slits on the pie crust, whatever design you prefer to let it vent. Bake it uncovered at 350 degrees for about an hour. Serving Suggestion: Dinner Rolls and Sliced Cantaloupe

German Chocolate Brownie Bites Yield: Approximately 36 brownie bites Time: 15 Minutes Hands On, 15 Minutes Cook Time 1 brownie mix for 9x13 inch pan Ingredients to make brownies (oil, eggs, water) 1 can coconut-pecan frosting Preheat the oven to 350 degrees. Mix brownie batter according to package directions. Spray mini muffin pan with cooking spray. Spoon small amount of brownie batter into muffin pan, enough to fill ⅓ to ½ full. Spoon small amount of frosting onto each cup of brownie batter. Top with more brownie batter, filling cups all the way. Bake for 15 minutes. Makes about 36 brownie bites.
