Pat pork dry with paper towels; place in shallow roasting pan. In small bowl, stir together garlic, salt, sage, rosemary, pepper and olive oil to make a paste. Rub garlic paste over all surfaces of pork loin; place in oven, roast for 15 minutes. Turn oven temperature down to 300ºF, roast for 15-20 minutes, take internal temperature using an instant-read thermometer. When internal temperature of roast is 145ºF, remove from oven, tent loosely with foil and let rest 10 minutes before slicing to serve. Makes 5 servings, with possible leftovers. Carolina Country-Style Ribs 2 quarts cider vinegar 6 Tbsp. salt 1 Tbsp. cayenne pepper 1-1/2 Tbsp. red pepper flakes 1/4 cup molasses or 1/2 cup firmly packed brown sugar 1-1/2 to 2 lbs. boneless country style ribs Combine ingredients except pork in a glass bowl. Add pork ribs to sauce and marinate for at least 4 hours in refrigerator. Remove ribs and heat remaining barbecue sauce to a boil in a saucepan.
