Nuggets of knowledge.. The most effective rule of cocktails is; 3 parts strong (the spirit or main alcohol ingredient) 2 parts sour 1 part sweet Most cocktails adhere to the above rule, which generally means the flavours are equal and the cocktail should be perfect each time you follow the rule. Martinis- There is a traditional theory what martinis are to only ever be stirred and not shaken, as shaking the spirit can bruise the spirit which is not only disrespectful to the spirit but can create a bitterness that effects the flavour. James Bonds Shaken not stirred, is a joke and not meant to be taken seriously. Julep Strainers- are generally only used for traditional Martinis and cocktails similar, as per the theory of bruising spirits, julep strainers gently hold back the ice while pouring out the cocktail, also due to not shaking you generally do not have small shards of ice to have to strain out. The first ever cocktail ever recorded and printed in a newspaper in the 1800 s was an old fashioned, it is believed to be one of the first cocktails ever created. There are various theories of where the work cocktail originated, but the most common is that the first ever cocktail was garnished with the tail of a cock- a feather. Some cocktails call for muddling some call for squeezing the juice, not only is for aesthetic reasons but is also due to flavour. When you muddle fruit you muddle the pith with it, which is quite bitter, and meant to be a part of the flavour of that cocktail. When you squeeze the juice you avoid any pith getting into the cocktail, and its meant to only be the flavour of the juice alone being added to the cocktail. If you master a Caprioska, then you can make an array of cocktails as that is the main format for the majority of cocktails. A Caprisoka uses vodka, whereas if you use a Cachaca instead of vodka then it s a Caipirinha, then if you use rum as your main spirit then it s a daiquiri, if you ass mint to that then it s a mojito, if you do that again with gin and mint then it s a Southside. 2 P age
ESPRESSO MARTINI 15ml Kahlua 15ml Vodka 10ml white crème de cacao (can minus) 30-45ml espresso coffee (depending on guest choice) strong or average Chill the martini glass. Make the coffee first and let cool, put all the ingredients in shaker, (add ice straight from freezer), give it a good hard quick shake and strain into a martini glass quickly. Do not let ice melt. It should have a nice creamy layer on top, add either 3 coffee beans on top or grated chocolate to garnish MARTINI Traditionally was always gin now adapted to using vodka with industry trends 30ml Vodka or Gin 10ml Dry Vermouth 3 olives on a toothpick Combine vodka/gin and dry vermouth in a cocktail mixing glass. Fill with ice stir until chilled. Strain into a chilled martini glass. Garnish with 3 olives on a toothpick. Tips: With a twist- Lemon Rind/ Grapefruit/ Citrus Fruit Dry Martini- more spirit less vermouth 3 P age
MOJITO Please note the two different methods used to make mojitos. Replace Rum with chamboard for a summer drink! 5 fresh mint leaves ½ lime, cut into 4 wedges 15ml sugar syrup 30ml rum Top with soda water Club- Muddle the lime in the boston shaker, add sugar & rum, add ice, clap mint on top of ice and shake gently. Dump into a highball glass, top with soda and garnish with mint Standard Build- Use a highball or pilsner glass, muddle lime, add rum & sugar syrup. Add ice and soda and clap in mint. Use bar spoon to fold through mint. Garnish with lime wedge and mint. SOUTHSIDE 30ml Gin 15ml lime juice (generally half a lime) 10ml sugar syrup 7 mint leaves Shake hard and double strain into martini glass. Garnish with mint leaf floating in glass 4 P age
CARPRIOSKA 30ml Vodka 15ml sugar syrup ½ lime, cut into 4 wedges Muddle lime in Boston shaker, add sugar syrup and vodka with ice, shake hard then dump in rocks glass. Garnish with Lime. COSMOPOLITIAN 15ml Vodka 15ml Cointreau 10ml fresh lime juice 45ml Cranberry Juice Chill martini glass. Place all ingredients into a Boston shaker, add ice and shake hard. Strain into a martini glass, garnish with flamed orange peel or lime wheel. 5 P age
WHISKEY SOUR You could also make a rum or tequila sour just replace the spirit. purposes, double in real life situation! 30ml whiskey (chivas) 15ml squeezed lemon juice 15ml egg white Pour ingredients into a Boston Shaker and dry shake for 10 seconds (take the spring from the hawthorn strainer and place in shaker to get the foam effect). Add ice and shake hard for 10 seconds. Strain into a chilled martini glass and garnish with a cherry and a slice of orange. AMARETTO SOUR 30ml Amaretto 15ml squeezed lemon juice 15ml egg white Pour ingredients into a Boston Shaker and dry shake for 10 seconds (take the spring from the hawthorn strainer and place in shaker to get the foam effect). Add ice and shake hard for 10 seconds. Strain into a chilled martini glass and garnish with a lemon wheel or lemon rind. 6 P age
JAPANESE SLIPPER 15ml Midori 15ml Triple Sec 15ml Lime Juice Chill martini glass, add all ingredients into a Boston Shaker with ice. Shake hard and strain into martini glass. Garnish with cherry SEX ON THE BEACH 15ml Peach Schnapps 15ml Vodka 30ml Orange Juice 30ml Cranberry Juice Build ingredients into a high ball glass over ice. OLD FASHION 30ml Whiskey (or any dark spirit) 1 sugar cube or 10ml sugar syrup 4 dashes of bitters Orange or lemon rind Build in glass. Drop sugar cube into old fashioned glass and soak in bitters then muddle, add whiskey, then ice, then garnish with orange rind and a maraschino cherry if you have it. NEGRONI 15ml Gin 15ml Campari or Aperol 15ml Rosso/ Dark Vermouth Orange Rind Build in glass- add all ingredients to an old fashioned glass, add ice, garnish with orange rind, stir and serve with straw. 8 P age
LONG ISLAND ICE TEA 10ml Gin 10ml Vodka 10ml Tequila 10ml Bacardi 10ml Triple Sec or Cointreau 10ml Lime Squeeze 10ml Lemon Sqeeze Top with cola Shake and Dump- Add all ingredients to boston glass, add ice, shake hard, dump into a highball/zombie or pilsner glass. Add more ice and top with cola. Garnish with lemon wheel WET PUSSY SHOT ¼ Vodka ¼ Peach Schnapps ½ Cranberry Juice Squeeze of fresh lime Pour all ingredients into a shot glass, spirits first, then squeeze lime juice from a lime wedge into shot. 9 Page
BRAIN HEMORRGAGE SHOT ¾ Peach Schnapps ¼ Baileys Drop of Grenadine / Red cordial Drop of Blue Curacao Pour the peach schnapps first, and then gently pour the baileys, use straw to drop the grenadine and blue curacao on top of the baileys MOCKTAIL Please note this means non alcoholic! You can use any kind of juice or fruit drink in your mocktail. 5 strawberries 15ml sugar syrup 10ml lemon juice ¾ cup soda water Blend all ingredients in a blender with ice until smooth. FRENCH MARTINI purposes, double in real life situation!! 15ml Chamboard 15ml Vanilla Vodka 45ml Pineapple Juice Lemon Rind Shake and Strain- Add all ingredients to a Boston glass, shake hard, strain into martini glass, garnish with lemon rind or nothing if you don t have. JAM DONUT SHOTS ¼ Chamboard ¼ Baileys Sugar Syrup / red cordial Sugar Rim the shot glass with red cordial and sugar (the red cordial makes the sugar go red like jam) Pour chamboard first, then layer gently with baileys on top. 11 P age
MARGARITA Please note the two different methods 15ml Tequila 15ml Triple Sec/Cointreau 10ml Sugar Syrup 30ml Lemon Squeeze Straight up- Rim martini glass with salt (use lemon slice to run around the lip of the glass), add all ingredients to boston glass, shake hard, strain into a salted martini glass, garnish with lemon wheel On the rocks- Rim old fashioned glass with salt (use lemon slice to run around the lip of glass. Add ingredients to boston glass, shake hard, strain over fresh ice in old fashioned glass, garnish with lemon wheel. BLOODY MARY If you replace vodka with tequila the cocktail becomes a bloody maria! 30ml Vodka 120ml Tomato juice 30ml lemon juice 10ml Worcestershire sauce Dash red wine if available Shake of salt and pepper Tobasco/ chilli Shake and Dump- add all ingredients to boston glass, add ice, shake hard, dump into a highball, add more ice if needed, sprinkle more salt and pepper on top and garnish with celery stick or lemon wheel 12 P age
DARK N STORMY purposes, double in real life situation!! 30ml Rum Half a Lime (cut in 4 quarters) Ginger Beer (dry ginger ale) 4 dashes bitters Build on Ice- Muddle lime in old fashioned rocks glass, add rum, then ice, top with ginger beer/ ginger ale, dash in bitters. Garnish the glass with a lime wedge on the lip. COCK SUCKING COWBOY SHOT ¾ Butterscotch Schnapps ¼ Baileys Pour the butterscotch schnapps into the shot glass first then gently layer the baileys on top 13 P age
B52 SHOT 1/3 Cointreau or Triple Sec 1/3 Kahlua 1/3 Baileys Pour the Cointreau/triple sec first, then run Kahlua down the side of the shot glass so it layers under the Cointreau/triple sec, then gently layer the baileys on top. GRASSHOPPER 15ml Fresh Cream 15ml Crème de menthe (green) 15ml Crème de cacao (white) Chocolate Flakes (if you have) Shake and strain- Add all ingredients to Boston glass, shake hard, stain into martini glass. PINA COLADA 15ml Bacardi Rum 15ml Malibu 45ml Pineapple Juice 30ml Coconut Cream Blended- Add all ingredients and a scoop of ice into the blender and blend. Pour into a hurricane/colada/zombie/pilsner or highball glass. Garnish with either a pineapple slice or maraschino cherry. QUICK FUCK SHOT 1/3 Midori 1/3 Kahlua 1/3 Baileys Pour Midori first, then Kahlua running it down the side of the shot glass so it layers under the triple sec / Cointreau, gently layer the baileys on top. 15 P age
