Place lemon zest cake mix and liquid egg into a mixing bowl. Mix for 4 minutes on medium speed. Scrape down the bowl, add oil and water and mix for a further 3 minutes. 2. Grease and line a sheet tray and spread the 4.5kg of cake mix evenly across the tray. 3. Place the lemon custard into a piping bag and pipe diagonal lines across the full tray. 4. Bake @ 180 C for 35-40 minutes until golden brown. Allow the tray to cool and brush with clear neutral glaze. Portion the tray 4 x 9 (36 pieces). 5. Whip the margarine, icing sugar & sweet whip together on slow speed for 4 minutes. Add the strawberry paste and whip for 20 minutes until light and fluffy. 6. Pipe 30g of buttercream onto the centre of each slice. With a palette knife swirl the butter cream to create little hallow nest shapes. 7. Place 3 mini eggs into each nest and sprinkle with crushed chocolate egg pieces.

Place the chocolate sponge mix and the water into a mixing bowl. Beat for 2 minutes on slow speed. Scrape down the bowl and beat for 12 minutes on high speed. 2. Spray 8 x 8 cake tins with pan coating spray. Scale each sponge to 280g. 3. Bake the sponge cakes at 180⁰C for 20-22 minutes. Allow to cool completely. 4. In a bowl whisk together the sahnissimo cream stabilizer, water, sugar and macchiato paste, fold in the whipped cream. 5. Cut each sponge into 2 layers, each gateaux will need 4 even layers. Heat the caramel in a bowl in the microwave and spread 50g of caramel on the first layer followed by 100g of macchiato cream, repeat for the 2nd & 3rd layers of each gateaux avoiding the top layer. 6. Spread the top and sides of the cake evenly and neatly with 200g of macchiato cream, use a ruler to scrap the cream along the sides and even out the top. 7. Place the cake in the freezer for 20-30 minutes until the cream is solid. Melt the Sacher topping gently in the microwave, ensure it is not too hot and spread over the top and drizzle down the sides. 8. Once the topping is dry, pipe 14 rosettes onto the top of the cake and decorate with a caramel drizzle, chocolate flowers and curls. Place Berliner Mix, yeast and water into a mixer with dough hook attachment and mix for 2 minutes on slow speed, followed by 8-10 minutes on fast speed. Ideal dough temperature should read 23 C. 2. When mixed, add the sultanas and peel, then mix on slow speed until fruit is evenly distributed. Take care not to break down the fruit. 3. Scale head of dough @ 2100gm or process through roll plant to deliver 70gm dough pieces. 4. Mould into neat rounds and evenly space 9 x 6 across onto papered and greased trays. 5. Proof at 30-35 C, 70/75% r/h for approx. 60 80 minutes. 6. For the crossing paste: Beat the mix and water together for 3-4 minutes until smooth. Transfer the paste into a piping bag. 7. Once proved, pipe the buns with long thin straight lines to form a cross in the centre of each bun. 8. Bake in a deck oven at 210 C for 20-25 minutes or in a rack oven at 220-230 C for 12-15 minutes. 9. Glaze the Hot Cross Buns immediately after removing from the oven then return the tray to the oven for 2 minutes to set the glaze, preventing them from becoming too sticky.
