During June 25th-July 4th, I paid a visit. I fl ew over from Shanghai to Taipei and joined Alicia and my kids there. This is my fi rst visit in over fourteen years. It was a great pleasure to see Alicia s father, sisters, relatives and friends. We had parties, we traveled together for trips, and we all took lots of pictures. I had a great time there. During the trip, I always try to fi nd out what was different and unique in Taipei. Here is what I observed: Taipei is a city of motorbikes (same like Ho Chi Min City in Vietnam). If you walk along the street, you will see hundreds and hundreds of motorbikes parked along both side. During rush hour, motorbikes outnumber the cars. Because of narrow streets and high buildings, motorbikes can move much quicker than cars and it is easier to fi nd parking space. Taipei is a food lover s heaven. There are so many small food shops with all kinds of variety choices in Taipei. When you stand on a street in Taipei, within a hundred yards in any direction, you will see at least 3-5 food shops. There is an even better place for food - the Night Market. There are hundreds of food shops and restaurants opened in a narrow street extending for a few blocks. I got overwhelmed by all the choices. I wanted to try lots of things but my stomach can only take a few. With help from Alicia s sisters, I tried some special foods. I really enjoyed it! Taipei has good dental service. I had some problems with one of my teeth and Alicia s sisters made an appointment for me. I had an estimate to do a root canal and crown for less than $300, which I had a quote of over $2000 here in USA. I really enjoyed the trip to Taiwan. INGREDIENTS For the marinade 1/2 cup olive oil 1 small red onion, fi nely chopped 2 garlic cloves, minced 4 tablespoons fresh lemon juice 2 tablespoons red wine vinegar 2 teaspoons Greek oregano Salt and Pepper For the Tzatziki 2 cups of Greek yogurt 1 English cucumber, peeled and grated 4 cloves of garlic, minced 2 tablespoons lemon juice 2 tablespoons extra-virgin olive oil 1 1/2 lbs pork loin, trimmedwof silver skin and excess fat, cut into 1-inch cubes Wooden skewers, soaked in water for 30 minutes before use Pocketless Pita DIRECTIONS 1. Mix all of the marinade ingredients together in a small bowl. Place pork cubes in a Ziploc bag and pour in the marinade. Seal the bag and toss to coat pork evenly with the marinade, then open the bag and reseal, removing as much air as possible. Place the pork in the refrigerator for at least two hours to overnight. 2. Mix all the tzatziki ingredients together in a bowl until well combined. Cover and place in the refrigerator for at least two hours to overnight. 3. Light one chimney full of charcoal. While the charcoal is lighting, thread the pork cubes onto the skewers. 4. When all the charcoal is lit and covered with gray ash, pour out and spread coals out evenly. Grill the pork skewers until they browned on all sides and cooked through, about 8 to 12 minutes, turning 4 times during cooking. Remove the skewers to a plate and allow to rest for 5 minutes. While the pork rests, grill the pita until lightly browned on both sides, about 1 minute per side. Remove the pita from the grill and quarter. To serve, place pita slices on a plate, lay the souvlaki on top, and place a dollop of tzatziki on the side.
