Easy Slow Cooker Thai Chicken Curry Soup Yield: 4-5 Servings Time: 10 minutes hands on, 5 ½ - 8 ½ hours cook time 1 lb. bone-in chicken ½ onion, diced 2 carrots, diced 1 celery stalk, diced 1 Tbsp. curry powder 1-32 oz. box chicken broth ¼ cup long-grain white rice ½ can coconut milk Cilantro, chopped, optional for topping Sriracha sauce, optional for topping Place chicken on bottom of the slow cooker. Add onion, carrots, celery, curry powder and broth. Cook on high 5-6 hours or low 7-8 hours. Remove chicken from crock and pull meat from bones. Stir rice, coconut milk and chicken meat back into the soup. Cook for 20-30 more minutes or until rice is cooked. Serve with chopped cilantro and Sriracha sauce. Pressure Cooker Version Add all ingredients, except rice and coconut milk, to the pressure cooker pot. Set for 30 minutes cook time. Do a quick pressure release. Remove chicken and shred. Return chicken to pot along with rice and coconut milk. Cook on sauté setting for 20-30 minutes until rice is tender. Serving Suggestion: Naan Notes: Remaining coconut milk can be frozen for future use. Use remaining onion for Hot Dogs with Homemade Baked Beans.

Slow Cooker Breakfast Casserole Yield: 4 Servings Time: 10 minutes hands on, 4-8 hours cook time Cooking spray to oil the crock 14 oz. bag frozen O'Brien Potatoes ¼ lb. diced ham 4 oz. shredded cheddar 6 eggs ¼ cup milk Salt and pepper to taste Spray the inside of the crock with cooking spray. Put the potatoes on the bottom of the crock. Layer ham and cheese on top of the potatoes. In a large bowl, beat the eggs. Stir in the milk and salt and pepper. Pour over top of the other ingredients in the crock. Cook on high for 4 hours on or low for 8 hours. Serving Suggestion: Easy Peachy Fruit Salad Easy Peachy Fruit Salad Time: 5 minutes hands on + chilling time ½ can peach pie filling ½ can mandarin oranges ½ can pineapple chunks ½ banana, coin sliced Stir everything together and chill until serving.

Hot Dogs with Homemade Baked Beans in the Slow Cooker Yield: 4 Servings Time: 10 minutes hands on, 3-4 hours cook time 2 cans navy beans, drained and rinsed 1/3 cup brown sugar 2 Tbsp. molasses 2 Tbsp. ketchup ½ bottle chili sauce ½ small onion, diced 3 slices bacon, cooked and chopped 4 hot dogs 4 hot dog rolls Combine all ingredients, except hot dogs and rolls, in the slow cooker. Cook on high for 3-4 hours. The beans may be soupy when you first take the lid off but should thicken up after a few minutes. Serve with hot dogs. Serving Suggestion: Fries, Quick Cole Slaw Notes: Use remaining onion for Thai Chicken Curry Soup. Quick Cole Slaw Yield: 3 Servings Time: 5 minutes hands on ½ bag of slaw mix ¼ cup mayonnaise 2 Tbsp. sugar 1 ½ tsp. red wine vinegar Salt and pepper Put the slaw mix in a big bowl. Mix the other ingredients together and pour over the slaw, tossing to coat.

Honey Mustard Chicken Legs in the Crockpot Time: 15 minutes hands on, 4-8 hours cook time 1 ½ lbs. chicken legs Salt and pepper, to taste Oil, for frying 3 Tbsp. spicy deli mustard ¼ cup orange juice 1-inch piece of fresh ginger, peeled 1 Tbsp. hot sauce 1 Tbsp. soy sauce ¼ tsp. crushed red pepper flakes 1 ½ Tbsp. honey In a large skillet, heat enough oil to cover the bottom of the pan to shimmering. Season the legs with salt and pepper and cook them until browned. Transfer to the crockpot. Add all sauce ingredients to the hot skillet and bring to a boil. Remove the ginger and pour the sauce over the wings in the slow cooker. (You can also skip browning, if desired, and just mix the sauce ingredients together and pour over the chicken in the slow cooker.) Cook on high for 4-5 hours or on low for 7-8 hours. Pressure Cooker Version Use 1/3 cup deli mustard, 1 cup orange juice, 2-inch piece of fresh ginger, peeled, 2 Tbsp. hot sauce, 2 Tbsp. soy sauce, ½ tsp. crushed red pepper flakes and 3 Tbsp. honey for the sauce. Add frozen chicken legs to the slow cooker pot. Pour sauce over chicken legs. Set cook time for 25 minutes. Do a quick pressure release. Serving Suggestion: Roasted Sweet and White Potatoes, Green Beans Roasted Sweet and White Potatoes Time: 10 minutes hands on, 40 minutes cook time 1-2 sweet potatoes 1-2 white potatoes Olive oil Salt and pepper to taste Chop potatoes. Toss with a generous drizzle of olive oil and sprinkle with salt and pepper. Spread out on a baking sheet and roast at 400 degrees for about 40 minutes, until the potatoes are tender when poked with a fork.

Slow Cooker Sausage Jambalaya Time: 10 minutes hands on, 7-8 hour cook time 1 yellow onion, diced 1 cloves garlic, minced 1 stalk celery, diced 1 medium red bell peppers, diced 2 cups crushed tomatoes 1 ½ cups chicken stock 1 tsp. chili powder 1 tsp. Cajun seasoning ¾ cup uncooked brown rice 1 lb. precooked Andouille sausage, coin sliced In the slow cooker, stir together the onion, garlic, celery, red pepper and spices. Stir in tomatoes and broth. Stir in the brown rice until thoroughly combined. Fold in the sausage. Cook on low for 7-8 hours. Serving Suggestion: Roasted Broccoli and Red Pepper Roasted Broccoli and Red Pepper Time: 10 minutes hands on, 15-20 minutes cook time ¾ lb. broccoli, cut into florets ½ red bell pepper, cut into strips Olive oil Salt Pepper Toss the broccoli and red pepper with a drizzle of olive oil. Sprinkle with seasonings and toss again. Place on a rimmed cookie sheet and put it in the oven at 400 degrees for about 15-20 minutes.

Buffalo Chicken Loaded Baked Potatoes Time: 5 minutes hands on, 5-8 hours cook time 1 ¼ lbs. frozen chicken tenders 1/3 cup hot sauce ½ packet ranch dressing mix 1 crushed garlic clove 3-4 baking potatoes Ranch dressing Blue cheese dressing Bacon bits Place chicken in the slow cooker. Stir hot sauce, ranch dressing mix and garlic together. Pour over chicken. Cook on high 5-6 hours or low 7-8 hours. Meanwhile, clean and bake the potatoes for 1 ½- 2 hours at 350 degrees. Or, potatoes can be cooked on low in the slow cooker the night before and reheated before serving. Shred chicken. Serve potatoes, topped with chicken, ranch or blue cheese dressing and bacon bits. Serving Suggestion: Simple Lettuce Wedge Salad Notes: Remaining ranch dressing mix can be stored in an airtight container for future use. Simple Lettuce Wedge Salad Time: 5 minutes hands on 1 head iceberg lettuce 1 tomato Bacon bits Ranch dressing Slice the head of lettuce into 3-4 wedges. Top with tomato, bacon bits and ranch dressing.

Death by Chocolate Brownies Yield: 16 Servings Time: 10 minutes hands on + baking time 1 box brownie mix (8x8 or 9x9 size), plus ingredients called for on box 1 cup chocolate chips, divided 2 cups Oreo cookies, roughly chopped Caramel ice cream topping Prepare brownies according to package directions. Remove brownies from oven and let cool for 5-10 mins. While still warm, top with ½ cup chocolate chips. Sprinkle crushed Oreos on top and lightly press down. Sprinkle remaining ½ cup chocolate chips over Oreos. Drizzle with caramel topping
